Reaching Protein Goals Without Compromising Taste

When I purchase “high protein” snacks and meals from the grocery store I am often disappointed. The gritty texture, the fake sugar “sucralose” taste, the additives and artificial coloring are really a joke.

That is why I have started making my own protein snacks at home!

At home I can make things like protein muffins without compromising quality and healthy ingredients. No more nasty protein snacks that cost a fortune. Just clean ingredients, and delicious taste!

Protein Goals

I discuss this in another post (Why Moms Need More Protein), but we as Americans are very deficient in the protein department. While this is true for Americans in general, it is especially true for women.

The recommended amount for maximum health benefits, energy, and metabolism balance is 80-100 grams of protein daily.

Reaching these goals is easy when you have recipes like this one and others in your back pocket!

Protein Breakdown for Protein Muffins

These protein muffins have two main sources of protein. The protein comes from protein powder and protein oats. This rounds out to about 6 grams plus of protein per muffin, perfect for a snack!

Choosing a Protein Powder

Since the main source of protein in these muffins is the protein powder, you want to choose a good quality, low or no sugar. You want one that will break down and not become gritty in the baking process. I have tried two brands that I buy from Thrive Market and they are both delicious! Chocolate protein powder from Aloha has 18 grams of protein per two scoops (you will use four). I have also used chocolate protein powder from Orgain (also purchased from Thrive Market). While usually more expensive, Orgain contains 21 grams of protein. Either of these options are perfect for making these muffins.

Protein Oats

While protein powder alone does give you a good protein source base, adding protein oats from Kodiak adds approximately one more gram. Not to mention, they contribute to the delicious taste!

I can only recommend what I have tried, which is Kodiak brand “protein oats”. They bake well and add that extra gram per serving (one muffin). You can find Kodiak protein oats at Walmart and Thrive Market.

Sweetener for Protein Muffins

One thing to watch out for when choosing your protein powder and oats is added sugar. Both Aloha and Orgain do not contain processed sugar (they both use stevia if I remember correctly). Kodiak Oats contain no added sugar.

This recipe calls for honey instead of sugar to help your body get the most out of the protein. You can use equal parts maple syrup if you prefer. Chocolate chips do contain sugar but if you opt for a dark chocolate variety (or sugar free chocolate chips from Thrive) you will have less added sugar.

Ingredients for Protein Muffins

  • 1 cup whole milk
  • 1/3 cup oil or butter (melted)
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup protein oats
  • 4 scoops chocolate protein powder
  • 3/4 cup flour
  • 1/2 cup chocolate chips

Yield. This recipe will give you 12 muffins or 6 large, bakery style muffins.

Storage. Store your muffins in an airtight container or ziplock bag. They are freshest within the first 3 days but will last up to 5 days.

Ingredients
  

  • 1 cup whole milk
  • 1/3 cup oil or butter melted
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup protein oats
  • 4 scoops chocolate protein powder
  • 3/4 cup flour
  • 1/2 cup chocolate chips

Instructions
 

  • Combine milk, butter, honey, and eggs in a large mixing bowl or stand mixer.
  • Add protein powder and oats. Mix until batter is brown from the chocolate powder.
  • Add baking powder, soda, salt, and flour. Mix until smooth. Gently mix in chocolate chips.
  • Fill greased muffin tins 3/4 full. Bake at 350℉ for about 15 minutes.

Guilt Free Jam- Simple Ingredients

This strawberry jam is as guilt free as it gets! Made with organic cane sugar, lemon juice, and fresh berries. You can rest knowing your jam is pure and free from preservatives!

Many store bought jam labels have six plus ingredients. This doesn’t sound bad until you look at what they are. Many include high fructose corn syrup and some even include red dye!

These ingredients are harmful to the body and absolutely unnecessary. It takes just 15 minutes to make in your own kitchen with clean ingredients!

Everything You Need for Strawberry Jam

You truly do not need much to make strawberry jam! Just a few utensils and three ingredients…

  • one large stock pot
  • pint jars (amount will vary depending on the amount of strawberries you are processing)
  • blender or food processor
  • lemon juice
  • strawberries
  • sugar- I prefer organic cane sugar

Lemon Juice. The purpose of the lemon juice is to preserve and keep the vibrant color of the strawberry. It replaces the “citric acid” in many store-bought jams.

Strawberries. You will want fresh, washed berries with the tops removed. You do not need to slice them, the food processor or blender will do that for you.

Cane Sugar. Sugar is necessary to get the “jam” texture and sweetener. You can use less sugar if you prefer, however, your jam will be a more runny texture.

How to Make Strawberry Jam

Making strawberry jam is so simple and honestly, fun! Here are a few things to note before making it…

  • Each pound of medium to large berries will make about 1 pint of jam.
  • You will need to store your jam in the refrigerator unless you follow canning instructions.

Step One: Wash and Blend

First, you will need to wash your berries well. Strawberries make the dirty dozen list- meaning they are one of the most sprayed and exposed to toxic chemicals. Even organic and local produce should be washed to remove dirt and other particles that can contaminate the jam.

Wash your strawberries in lukewarm water with 1 cup of white vinegar and 2 tsp baking soda.

Cut the tops off and place in a blender or food processor (I have had this one for years and use it every week in the summer!). Add lemon juice (about 1 tsp per pound of berries).

Blend on low speed until there are no chunks. You do not need to remove the seeds for jam.

Step Two: Cook the Jam

Place strawberries and sugar in a large pot on medium-high heat. Cook until boiling, stirring constantly to keep from burning. After boiling for one minute, turn the heat down to low and simmer for about 3 minutes.

Step Three: Jar and Store

Carefully place the hot jam into clean pint jars. Leave about a one inch headspace. Screw lids on tightly and leave to seal on the countertop for about 8 hours or overnight.

The jars will be sealed but not fully processed. They will not be shelf stable unless canned. However, they will last for about six months kept sealed in the refrigerator. Unsealed they will last up to one month. Discard immediately if any mold is growing or there is a rancid smell present.

How To Use Strawberry Jam

You can use your jam so many ways. It makes a delicious filling for donuts and pies. Use it on biscuit at breakfast time. However, we use it every week for peanut butter and jelly on our homemade sourdough bread! It does not get any more homemade than that!

Three Ingredient Strawberry Jam

Deliciously sweet strawberry jam made with just three ingredients and three easy steps!

Equipment

  • Large stock pot
  • Food Processor or Blender
  • 4 pint jars

Ingredients
  

  • 4 lbs strawberries
  • 8 tsp lemon juice
  • 3-4 cups cane sugar SEE NOTE

Instructions
 

  • Wash all your berries in a lukewarm bath with 1 cup white vinegar and 2 tsp baking soda. Remove all the tops and fleshy, white centers. Place in a food processor or blender and blend until smooth.
  • Mix strawberries, lemon juice, and sugar in a large pot at medium-high heat. Stir constantly to keep from burning. Allow to come to a boil, then reduce heat. Simmer for three minutes on low-medium heat.
  • Place jam in clean, sterilized jars (SEE NOTE 2). Screw lids tightly on jars. Allow to rest for 8 hours on the countertop. Place sealed jars in the refrigerator to store for up to six months.

Notes

NOTE ONE: One cup of sugar per pound of strawberries is recommended. However, if you prefer less sugar you can reduce it by one cup. Your jam may be slightly more runny. 
NOTE TWO: To sterilize your jars, boil them, fully submerged in water for about 2 minutes. Remove carefully.

Protein Bite Base

  • Old fashioned oats (or protein oats)
  • sweetener- honey, sugar, or maple syrup are my favs!
  • peanut butter
  • optional: protein powder for additional protein value and flavor

Freezing Protein Bites

Freezing protein bites is an easy way to preserve them for use during the month. If you make one big batch you can freeze them and pull out a few at a time.

They thaw quite quickly on the counter or you can eat them still slightly frozen for a cold treat!

It is very easy to freeze them. All you need is a sheet pan or two, some parchment paper, and a tupperware container or ziplock bag (for storing).

Simply roll the mixed ingredients into balls. Cover the sheet pan with the parchment. Place the balls on the parchment giving enough space so they do not touch each other.

Freeze for two hours. Place in a ziplock bag or freezer safe container. Store up to six months in the freezer for freshness.

Boosting the Protein

Some protein bite recipes like this one call for peanut butter as the main source of protein. This alone without protein rich nuts is not a significant source. They are great for a snack but adding in protein powder can take it up a notch if you are trying to reach specific goals!

Add a few scoops of protein powder to this recipe or any other recipe for even more of a protein hit!

You can also use protein oats instead of regular oats to boost the protein content.

No Bake Chocolate Cranberry Protein Bites

A delicious, easy to make high protein snack! These protein bites are full of dark and white chocolate, and dried cranberries. Leave off the cranberries to make chocolate chip protein bites!

The Simple Art of ANY Homemade Granola Recipe

Making any homemade granola recipe is so simple. This pantry staple is often filled with preservatives, additives, and lots of extra sugar when purchased off the store shelf. Really you only a few basic ingredients to make a delicious granola at home!

Here’s the main base for any granola recipe…

  • Oats
  • Cereal/seeds/nuts
  • Dried fruit/chocolate (optional)
  • Oil or butter of choice
  • Binder/sweetener (honey or maple syrup)

Amounts used will vary depending on your exact ingredients. However, a simple starting place is equal parts oats and cereal/seeds/nuts. You can use whatever nuts and seeds you have on hand- or any combination! So for instance, if I use 2 cups of oats I will use 2 cups of some sort of combination of rice cereal, seeds, and nuts.

Adding dried fruit or chocolate is completely optional but adds different flavor profiles to your granola base. I usually start with 1/2 a cup and eyeball it from there.

The butter or oil gives the granola depth of flavor and the desirable crunch.

To bind it all together and sweeten the deal you will need honey or maple syrup. I typically use a ratio of 1:2 honey vs oats. So if I used 2 cups of oats I would use one cup of honey; or 1/2 cup oats, 1/4 cup honey.

With just a bit of guesswork and adjustments, you can use these tips to make any granola recipe!

Using & Storing Homemade Granola

Homemade granola can be used for any and all occasions! Eat it as a snack on the go. Top yogurt with it for a quick, high protein breakfast. For dessert, top vanilla bean ice cream with homemade granola.

To store, make sure the granola has cooled all the way. After cooling, place the granola chunks into a glass jar or glass container with an airtight lid. Keep in a cool, dry place. Granola will last like this for up to six months. You may need to stir it lightly with a fork occasionally to keep it from clumping up.

How to Make

Making your own granola at home is super simple! Here’s how to do it…

  • Combine your mixture of oats and seeds/nuts/cereal to a large mixing bowl.
  • Add in your butter and binder- honey or maple syrup. Stir it well, allowing it to completely coat the dry granola mixture. Use your hands for best results.
  • Bake it at 350 degrees for about 15-20 minutes or until golden brown. Stir it about every 5-10 minutes to bake it evenly.
  • Add in extras like dried fruit and/or chocolate chips after the granola has cooled.
  • Follow storage instructions above for best results.

Ingredients
  

  • 2 cups old-fashioned oats
  • 1 cup rice cereal
  • 1 cup chopped pecans or other available nuts
  • ¼ cup butter or oil of choice
  • 1 cup honey or maple syrup
  • ½ cup dried cranberries
  • ½ cup chocolate chips

Instructions
 

  • Combine oats, rice cereal, and nuts in a large bowl.
  • Add melted butter and honey. Stir in with large spoon or by hand. Make sure the dry granola is completely and evenly coated with the wet ingredients.
  • Add in dried cranberries.
  • Bake at 350 degrees for 15-20 minutes or until mixture is golden brown. Stir the granola every 6-7 minutes to bake evenly.
  • After the mixture has cooled completely, add in chocolate chips.
  • Store in quart mason jars or other glass container with airtight lid. Granola will store for up to six months with airtight seal.

  • 3-4 chicken breasts, boiled and shredded
  • 1-1 1/2 cup mayo

Steps for Making Dill Chicken Salad

Making your own dill chicken salad is a very easy and easy process. Here’s how to do it…

Begin by boiling washed chicken and shredding. The easiest way to shred chicken for this recipe is in a stand mixer with the frosting attachment. (This trick is a game changer!)

After the chicken has been shredded, season the chicken with salt and pepper then allow to cool completely before adding the mayo. Add more mayo if you like your chicken salad a bit more wet.

Next, add the dill relish or chopped pickles and seasonings. Seasonings should be added to taste!

Allow the chicken salad to chill (can be eaten warm if preferred) in the refrigerator for several hours or overnight for best results. Serve as a sandwich, with crackers for dipping, or simply as is.

Storing and Freezing Dill Chicken Salad

Dill chicken salad can be stored in the refrigerator for up to five days in an airtight container. It can also be frozen however, you will need to follow a few simple instructions…

  • Freeze in an airtight bag or container.
  • For short term storage (up to six weeks), freezing all the ingredients together is fine. After six weeks you may notice the mayo starting to separate in the thawing process.

Ingredients
  

  • 3-4 chicken breasts boiled and shredded
  • 1-1 1/2 cup mayo

What is so special about blueberry oatmeal from scratch? Big box brands make easy, convenient packages that are pre-made after all! Let’s talk about ingredients…

Yes, instant oatmeal packets are convenient. However they contain many unnecessary, and not so great ingredients. Around here we are all about cooking from scratch when possible and avoiding chemicals and preservatives in our food sources.

Most store-bought, instant oatmeal options contain about eight ingredients. Honestly, compared to most convenience foods this is not too bad. However, many of these ingredients have been processed and some (like preservatives) are unnecessary when you make your own oatmeal from scratch.

The taste of from scratch baked oatmeal is significantly better as well! Not to mention that you get much more yield out of this recipe than you do the instant oatmeal packaging, meaning it will last longer and feed more people. Everything tastes better from scratch and your wallet will thank you too!

Breakfast or Dessert?

Although this recipe is technically considered breakfast, this blueberry baked oatmeal is so delicious you could serve it as a dessert! Serve it fresh and warm from the oven topped with vanilla ice cream and you will not be sorry. Whether breakfast or dessert here are a few ways to make this recipe even more delicious….

  • Serve with fresh cream or ice cream. As already mentioned, this baked oatmeal served warm with ice cream is a treat you do not want to miss out on! If you are making it for breakfast, serve with fresh cream or top with homemade whipped cream.
  • Sprinkle with cinnamon or powdered sugar. Just a small dash of cinnamon or a sprinkle of powdered sugar takes this recipe up a notch!

The Overnight Method

Your blueberry baked oatmeal can be made as is or prepped using the overnight method. This method is great for busy moms (me!) who want to get a few steps ahead of the morning to do list. Here is how the overnight method works…

  • Mix all the oatmeal ingredients (except blueberries) the night before and place in the refrigerator until morning. You can also mix up the topping ingredients (everything except the butter).
  • This allows the oats to soak in the moisture of the milk and egg, as well, for better digestion and a more moist texture.
  • Bake as instructed.

Ingredients for Blueberry Baked Oatmeal

All the ingredients you need to make blueberry baked oatmeal are simple and you probably have most of them in your pantry now. Here is a complete list of what you will need and a list of substitutions…

  • 2 cups old fashioned oats
  • 2 cups milk
  • 1/3 cup cane sugar
  • 1/4 cup brown sugar
  • 2 tsp cinnamon
  • 1 egg
  • 1 tsp baking powder
  • 1/2 pint fresh or frozen blueberries (about 1 cup)

Streusel Topping

  • 1 cup oats
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp salt
  • 1/2 cup butter (one stick)

Substitutions for Blueberry Baked Oatmeal

Cane sugar. The cane sugar can be replaced with maple syrup or honey for a healthier, lighter sugar alternative. Replace using equal measurement.

Brown sugar. Use equal parts brown coconut sugar as a less processed, more natural substitute for brown sugar.

Cinnamon. The cinnamon is completely optional but does add flavor.

Butter. Butter can be substituted with equal parts melted coconut oil if desired.

Storing Your Blueberry Baked Oatmeal

Blueberry baked oatmeal is without a doubt best fresh! However, it can be made and stored for eating throughout the week in a glass container with a lid. Store in the refrigerator for up to five days and use as needed!

Tip: If you have leftovers they are best reheated in the oven vs the microwave.

Ingredients
  

  • 2 cups old fashioned oats or protein oats
  • 2 cups milk
  • ⅓ cup cane sugar or honey
  • ¼ cup brown sugar or coconut sugar
  • 2 tsp cinnamon optional
  • 1 egg
  • 1 tsp baking powder
  • 1 cup fresh or frozen blueberries

Streusel Topping

  • 1 cup oats
  • ½ cup all purpose flour
  • ½ cup brown sugar
  • ½ tsp salt
  • ½ cup butter one stick, melted

Instructions
 

Overnight Method

  • Mix oats, milk, sugar, brown sugar, cinnamon, egg, and baking powder in a large mixing bowl or bowl of a stand mixer. Cover and place in the refrigerator overnight.
  • Combine topping ingredients, leaving the butter out for now, and place in a cool, dry place or plastic bag overnight for use in the morning.
  • When ready to bake, remove oatmeal ingredients from refrigerator and place in a well greased 9×13 baking dish. Gently fold in fresh or thawed blueberries.
  • Bake at 350℉ for 15 minutes.
  • While oats are baking, melt butter and add to topping ingredients. Stir in until well combined. Texture should be like a thick granola.
  • Remove oats from oven after baking 15 minutes and add topping, pressing gently into the oatmeal with a fork or spatula.
  • Bake an additional 20-25 minutes or until topping is golden brown.

Instant Bake Method

  • Combine all the oatmeal ingredients, except the blueberries, in a large mixing bowl or bowl of a stand mixer. Place in a well greased 9×13 baking dish and gently fold in blueberries.
  • Bake at 350℉ for 15 minutes.
  • Combine all the topping ingredients (same bowl you used for oatmeal can be used). Stir until well combined. The texture should be like a thick granola.
  • Remove oats from oven and top with streusel topping, pressing some of it down into the oat mixture.
  • Place back in oven and bake an additional 20-25 minutes or until topping is golden brown.

This bbq chicken flatbread is so easy to make it really makes justifying buying store-bought flatbread hard! However, you can find pre-made flatbread in most bakery departments in local grocery stores that are decently fresh. Of course around here we are pretty much always going to suggest the “from scratch” version!

That is why I share recipes that are from-scratch but just as simple as going to the store and buying it off the shelf. No extra steps. No complicated ingredient lists. Just simple, from scratch options that you can make in your own kitchen quickly!

Here is why it is worth it to make your own flatbread…

  • Cheaper! Making your own flatbread at home is much more affordable than purchasing them pre-made from the bakery.
  • Low mess. This flatbread recipe only takes one mixing bowl. Just throw all your ingredients in and go!
  • Super quick! The amount of time it will take you to make this from scratch flatbread is quicker than you can get to the store and back. It takes less than five minutes of prep time and only about fifteen minutes to bake this bbq chicken flatbread recipe.

BBQ Chicken Flatbread Ingredients

The ingredients you need to make this bbq chicken flatbread are simple! Here is everything you need along with a list of substitutions….

  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 cup hot water
  • 1 tbsp. olive oil
  • 2 chicken breasts
  • ½ onion optional
  • 1 cup Kinder’s BBQ sauce
  • 2 cups shredded mozzarella cheese 
  • ¼ cup fresh herbs optional; for garnishing

Substitutions

Olive oil. Any oil or butter base can be substituted based on your preference and availability of ingredients.

Bbq sauce. Kinder’s bbq sauce was used on the pictured flatbread, however you can use whatever sauce you have on hand or a family favorite of your choice!

Mozzarella cheese. Personally, I found mozzarella to be the perfect flavor combo for this flatbread recipe. However, you could easily use any other cheese or add a favorite shredded cheese combination to make this recipe suitable to your family.

Herbs. The herb garnish is completely optional, it just gave it an extra boost of flavor. Add fresh cilantro, parsley, oregano, or whatever you have on hand!

How To Make BBQ Chicken Flatbread

This flatbread is very simple to make! The quickness comes from following the process I mention in the recipe below. I have found it to be the quickest way to get this meal made. After a few tries and perfecting the process, I can have this meal on the table in under thirty minutes (faster than pizza delivery!).

The process is basically this- dough made/resting, toppings prepped and cooked, flatbread assembly, then baking. You can shortcut it further by prepping the toppings ahead of time, having your chicken cut or even cooked already will speed up the process.

We currently bake our flatbread in the oven, however you could try on a well seasoned Blackstone grill or an outdoor pizza oven for a fun summer dinner!

Quick and Easy BBQ Chicken Flatbread

Delicious, fluffy flatbread made from scratch, topped with your favorite bbq sauce, juicy chicken, and heaps of mozzarella cheese! This quick and easy dinner recipe will soon become a family favorite!

Ingredients
  

  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 cup hot water
  • 1 tbsp. olive oil or melted butter

Toppings

  • 2 chicken breasts sliced thinly
  • ½ onion optional
  • 1 cup Kinder's BBQ sauce or favorite BBQ sauce of your choice
  • 2 cups shredded mozzarella cheese
  • ¼ cup fresh herbs optional; for garnishing

Instructions
 

Flatbread Dough

  • Combine flour, salt, and baking powder in a large mixing bowl. Add hot water and oil (or butter). Mix well until dough is soft and pliable. (The dough should not be very sticky but also not very firm. If it is too sticky try adding an extra ¼ cup of flour.)
  • Roll dough into a ball. Allow the dough to rest while you prep the toppings.

Toppings and Assembly

  • Dice onion and slice chicken into thin strips. Cook chicken (and onions if you prefer) on medium/low heat for best results. Season with preferred seasonings.
  • After toppings have been prepped, divide your ball of dough in half. Roll the flatbreads out on a well floured surface or directly on greased sheet pans.
  • First, apply drizzles of bbq sauce directly to the dough. Add cooked chicken slices, onions (optional), then top with cheese.

Cooking Instructions

  • Bake at 350 ℉ for 15-20 minutes or until the cheese starts to turn slightly brown in some places.
  • Optional: apply a second drizzle of bbq sauce and freshly chopped herbs to the top of your flatbread before serving.

Why Homemade?

You can always buy a container or can of whipped cream from the grocery shelves. However, for these reasons I highly recommend making your own homemade whipped cream….

Unhealthy/unnecessary Ingredients

The only ingredients necessary to make a great whipped cream are heavy cream, powdered sugar (or cane sugar), and vanilla extract (completely optional). Yet a store bought tub of whipped topping contains over 15 ingredients! These include corn syrups, vegetable oil, preservatives, and even coloring.

Sugar Content

Another reason to consider homemade is the ability to control the sugar content. You can go as sweet or plain as you want. Swap the powdered sugar for honey, maple syrup, or cane sugar for a healthier sweetener.

Tasty and Simple

Honestly, the taste of homemade whipped cream is just better- fresher! It also take zero effort to make. If you are wanting to make some from scratch swaps in your kitchen this year this is a super simple place to start- even for beginners!

Really this cream is delicious on any pies, cakes, and other desserts that call for whipped cream. Some of my favorites are apple pie, this lemon bread, and strawberry shortcake!

Ingredients for Homemade Whipped Cream

Homemade whipped cream requires only two ingredients- heavy whipping cream and a sweetener (powdered sugar, honey, stevia, maple syrup, cane sugar, etc.). The sweetener you choose may slightly effect the coloring of your cream so keep that in mind. However, I have used honey, powdered sugar, and cane sugar, all have yielded very similar results in texture and taste.

You can also add in a flavoring as an optional ingredient- such as vanilla extract, almond extract, orange, etc. Start by adding flavoring in slowly (1/4 tsp at a time) until desired results are achieved.

How to Make Homemade Whipped Cream

Making your whipped cream is easy and requires very little effort. However, it does require a tool that can whip up the cream enough to get it stiff. This is extremely difficult to do by hand because it requires intense mixing and high speed. Here are my preferred methods…

Emersion blender

This is the quickest and easiest way to make homemade whipped cream, especially in small batches. Simply pour your cream into a glass mason jar (wide mouth, quart size is preferred) and blend until stiff. Emersion blenders are affordable and easy to use/clean.

Stand mixer

Another way to make your whipped cream is in a stand mixer. You will want to use a frosting attachment or whisk attachment. Begin on medium-low speed. Slowly increase the speed until the cream is stiff and smooth.

Storing Tips

Whipped cream can be stored in a mason jar or an airtight container in the refrigerator. Use within one to two weeks for best freshness.

Easy Homemade Whipped Cream From Scratch

How to make delicious, homemade whipped cream from scratch with simple ingredients! Make this smooth whipped cream that melts in your mouth in just minutes using this go to recipe!

  • 1 cup heavy whipping cream
  • 2 tsp powdered sugar (or sweetener of choice; SEE NOTE)
  • ¼ tsp vanilla extract optional

Instructions
 

  • Combine heavy cream, sugar, and vanilla (if desired) into a stand mixer bowl or glass jar (for emersion blender method).
  • Mix on medium-high speed for about 2 minutes or until the cream becomes stiff and smooth.
  • Serve as is or chill in the refrigerator for 30 minutes before serving for best results!

Notes

NOTE: Powdered sugar can be substituted with cane sugar, honey, maple syrup, stevia, etc. Slight changes may occur in texture and color depending on the sweetener used but you should yield similar results.

The Egg Crisis

Do not let the current egg crisis get you all in a scramble! (Pun intended!)

Due to the shortage of eggs in the U.S. prices of eggs has gotten absolutely ridiculous. I located in East Tennessee and we are seeing the price of a dozen eggs sitting at around $6 on average. This average is expected to only go up in 2025.

However, for those of us who have our own chickens, we are hitting the season where egg production rapidly increases. This is why I have chosen to keep sharing egg recipes here on the blog while many blogs have gone to sharing “egg-free” recipes. I realize that so many of us have adopted this more natural way of living. There is also no need to completely cut eggs out of your diet just because they are expensive.

If you do not have chickens here is what I would suggest…

  • Buy some! This may sound too simple but it is the best solution for so many. (I understand not everyone lives in a place where this is possible.) Raising your own flock is so easy and the price of feed is well worth the investment!
  • Purchase them locally. For the first time in years the prices of grocery store eggs is actually higher than the average homestead, farm raised eggs you can purchase locally. You may have to go on an “egg hunt” to find a good source but they are definitely out there!
  • Shop the sales. I do not see eggs going on sale near as often around here. However, it does happen occasionally! If I did not have chickens I would highly consider taking advantage of the deals, stocking up, then mass making eggs to freeze (like this meal- keep reading for info on that!).

Eggs are too important and valuable in the diet to skip them weekly because of expense.

Delicious Ways to Serve Scrambled Egg Casserole

Scrambled egg casserole is delicious served all by itself but here are a few fun ways to create the perfect entree out of this dish! These ideas also help the casserole stretch a bit further for those who do not have an abundance of eggs.

Served with Sourdough Pesto Parmesan Bread

This is probably one of my favorite ways to eat scrambled egg casserole! This artisan sourdough loaf stuffed with pesto and parmesan cheese takes this meal to a new level. You can get the recipe here!

Scrambled Egg Casserole Burrito

Another fun favorite is to stuff a flour tortilla with scrambled egg casserole, maybe some extra cheese, and taco sauce. This makes a perfect on the go breakfast and is a great meal to prep for postpartum/nursing mothers!

Ingredients for Scrambled Egg Casserole

My favorite thing about this meal is how versatile it is. As with many of the recipe you will find here you can easily substitute or tweak a recipe to accommodate what you have available. Since that is the way I cook that is exactly the way I share with you here!

  • 12-18 eggs
  • 1/2 cup whole milk (or whatever kind you have on hand; water can also be used as a substitute)
  • 1lb meat of choice (sausage, chicken, bacon- or a mixture)
  • veggies of choice (if desired; sweet peppers, jalapeños, fresh herbs, tomatoes, onions, potatoes, etc.)
  • salt, pepper, other seasonings
  • 4-6oz block or shredded cheese (whatever kind you prefer- we love pepper jack, Mexican blend, parmesan…really any and all of it!)

Making this casserole is so simple and customizable. Simply scramble the eggs with 1/2 a cup milk or water. Season according to preference. Add in cooked meat, cooked or fresh veggies, and seasonings. Add in or top with sliced or shredded cheese. Bake at 350 F until the cheese has melted (about 10-15 minutes).

Freezing Scrambled Egg Casserole

Another great benefit about this meal is that it can easily be prepped and frozen for a quick breakfast later on. You can even portion it into freezer safe containers for individual scramble bowls. Simply assemble the eggs, meat, veggies, and cheese into a 9×13 casserole dish or freezer safe containers without melting the cheese in the oven. Your casserole will last in the freezer up to six months (use by four for best freshness).

For best results, thaw completely before baking at 350 F for 25-30 minutes or until the center is hot and cheese has melted. For individual portions, the casserole can be thawed, then heated in the microwave until completely warmed.

Short-Term Storage

This casserole can be stored short term in the refrigerator for 3-4 days in an airtight container. Simply reheat in the oven or in the microwave when ready to use.

Ingredients
  

  • 12-18 eggs

  • ½ lb cooked ground sausage
  • ½ lb cooked, chopped bacon
  • 3-4 sliced sweet mini peppers (or half bell pepper)
  • ½ onion chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • Fresh or dried herbs of choice (optional)
  • 4-6 oz block or shredded cheese of choice

Instructions
 

  • Begin by combining eggs, milk, salt, and pepper in a bowl. Mix well. Scramble on medium heat.
  • Chop and cook meat and veggies in another skillet (for low mess, wait until eggs are done and use the same skillet).
  • Combine eggs, meat, and vegetables in a 9×13 casserole dish.
  • Top the casserole with sliced or shredded cheese. If using sliced, slick the sliced randomly into the egg mixture, as pictured.
  • Bake at 350℉ for 10-15 minutes or until cheese has fully melted.

One of the main ingredients in this chicken cordon bleu casserole is the breadcrumbs. They are not required for this delicious meal but they definitely elevate it! However, if you are like me you probably do not keep breadcrumbs on hand. At least- I used to never have them!

These days I always have from scratch breadcrumbs in the pantry. This quick, ten minute recipe is an easy way to use up bread ends and stale bread. You can use sourdough, white, wheat- whatever you have on hand! The best part- it only takes about ten minutes.

Chicken Cordon Bleu Casserole Ingredients

The ingredients for chicken cordon bleu are so simple and making it from scratch is a breeze!

How to Make Chicken Cordon Bleu Casserole

If you have heard of or made chicken cordon bleu, you know it is delicious but the process of making it is somewhat complex. To make classic chicken cordon bleu, you roll ham and cheese into a piece of chicken breast, carefully dip it into an egg mixture, then dip the stuffed breast into Italian breadcrumbs. Top it with creamy dijon sauce and you have chicken cordon bleu!

This recipe carries all of those classic flavors, however it streamlines the process!

The casserole version is made by simply slicing the chicken into strips and layering in slices of ham and cheese in between. It is then seasoned and covered in the creamy dijon sauce. Top it with breadcrumbs, bake, and you are done!

Chicken Cordon Bleu Casserole

This delicious recipe has all the flavors of classic chicken cordon bleu- but without all the time! Slices of chicken breasts layered with slices of ham and Swiss cheese, smothered in a dijon cream sauce. Simply throw all your ingredients into a casserole dish, top with breadcrumbs, and bake!

Ingredients
  

  • 2-3 chicken breasts
  • 6-7 slices deli ham
  • 4-5 slices Swiss cheese or whatever cheese you have on hand
  • 2 tsp Italian chicken seasoning
  • 3 tsp dijon mustard
  • 1/4 cup mayonnaise
  • 1 cup milk
  • 1 tsp black pepper
  • 1 cup Italian breadcrumbs

Instructions
 

  • Slice chicken breast into small, thin strips then place in the bottom of the casserole dish.
  • Shred ham slices into thirds and cheese into halves. In between the chicken breasts, randomly layer in shreds of ham slices and slices of cheese.
  • Add in chicken seasoning over meat and cheese mixture.
  • Make the creamy dijon sauce by combining dijon, milk, mayo, and black pepper (I prefer to use an emulsion blender but you can also stir by hand). Pour the sauce over top of the meat and cheese, moving portions so it will coat in between the chicken and deli slices.
  • Bake for 10 minutes at 350℉. Remove from oven then add breadcrumbs to the top. Bake an additional 10-15 minutes or until chicken is 160℉ internal temp.
