Fermenting Sourdough Brioche Bread

As with most sourdough recipes, fermenting your sourdough brioche bread is totally optional- especially if you have a strong, mature starter. However, the benefits of fermenting are many! If you are new to sourdough here is why you would consider fermenting this recipe…

  • Easier to digest. Fermenting your dough makes it easier for the body to digest the proteins in sourdough bread. This makes it a great option for those with gluten sensitivity. As the fermentation process happens the glutens in the dough break down so the body does not have to.
  • Softer, better textured bread. Fermenting sourdough gives the baked goods a softer texture and better rise. If your bread is constantly coming out gummy or dense you may need to add more time to your fermenting or slow ferment your dough (fermenting in the refrigerator).
  • Higher probiotic content. This is controversial because technically some of the probiotic benefits are lost in the baking process. However, fermenting does create a higher volume of probiotics in the dough.

How Long to Ferment

Sourdough brioche bread definitely benefits from being fermented. The fermentation process helps give it that fluffy, buttery texture you are looking for.

For best results, slow ferment the dough in the refrigerator for about 8-12 hours. As a busy mama, the flexibility of sourdough is something I rely on. Fermenting the dough for a minimum of 4 hours (on the countertop) to a maximum of 18 (in the refrigerator) yields great results. Any time below or above that 4-18 hour window will give you great sourdough brioche bread, just slightly less fluffy and soft.

Ingredients for Sourdough Brioche Bread

Sourdough brioche bread is made with very simple ingredients. The ingredients are built off your basic sourdough loaf, plus butter, an egg, and a sweetener. Here’s what you will need….

  • 1 stick salted butter
  • 1 cup sourdough starter
  • 3/4 cup warm water
  • 1 egg
  • 2 tsp salt
  • 1/3 cup honey*
  • 3-3 1/2 cups all-purpose flour

*Honey can be substituted with equal parts sugar or maple syrup.

How to Make Sourdough Brioche Bread

Sourdough brioche bread is fun and easy to make. As we already learned it is a very time flexible recipe. Here’s what you need to know…

All your ingredients can be mixed together quickly. The dough will be a bit sticky and shaggy. Allow one to two hours to rest and rise before covering and placing in the refrigerator to ferment.

Ferment in the refrigerator for 8-12 hours or on the countertop for 6-8 hours.

After the dough has fermented, begin your stretch and folds. This process is explained better below…

Stretch and Folds

The soft texture of buttery brioche bread comes through a series of stretch and folds. You will want to do 3-6 rounds of stretch and folds with 30 minutes to an hour between each round. If you are unfamiliar with the process of stretch and folds here is how it works…

  • Pretend your ball of dough is a square. Start on the end that is farthest away from you. You will pull this end of your “square” UP, slightly stretch it OUT in a Y shape, then over the dough towards the side of the square that is closest to you.
  • Rotate the bowl a quarter turn and repeat the process. Up, out, over.
  • Rotate again a quarter turn, taking the dough from underneath then up, out, over.
  • Rotate one more time a quarter turn, then stretch up, out, over.
  • Cover your bowl with a slightly damp tea towel. Let rest 30 minutes to an hour. Repeat the process at least three times and as many as six times for best results.

Final Steps

After the stretch and folds are complete, shape the dough into a loaf on a well floured surface. Place it in a loaf pan and allow to rise 3-4 hours in a warm place until the dough has risen just over the top of the pan. Bake at 350 degrees F for 30-35 minutes, until the top has browned.

For extra buttery softness, brush butter on the top of the loaf fresh from the oven.

Storage Tips

Store sourdough brioche bread in a plastic bag or airtight container for up to seven days. Eat within five days for best freshness.

Easy Buttery Sourdough Brioche Bread

Delicious brioche loaf made with sourdough starter! So buttery and soft- perfect for Texas toast, French toast, sandwiches, and more!

Ingredients
  

  • 1 stick salted butter
  • 1 cup sourdough starter
  • 3/4 cup warm water
  • 1 egg
  • 2 tsp salt
  • 1/3 cup honey*
  • 3-3 1/2 cups all-purpose flour

Instructions
 

  • Combine sourdough starter and warm water in a mixing bowl. Allow to dissolve around five minutes then mix together with a fork or small whisk.
  • Add melted butter, egg, salt, honey, and 2 cups flour. Mix together by hand or on low speed with a stand mixer.
  • Add flour 1/2 cup at a time until the dough is smooth and firm but slightly sticky.
  • Allow the dough to rise about two hours on the countertop.
  • Ferment in the refrigerator for 8-12 hours (up to 18 hours will achieve similar results) or on the countertop for 4-8 hours.
  • After the dough has fermented, begin 3-6 rounds of stretch at one round every 30 minutes to an hour. (Note: if you are unfamiliar with stretch and folds see the section of this blog post on "How to Make Sourdough Brioche Bread".)
  • Shape the dough into a loaf on a well floured surface.
  • Allow dough to rise in a loaf pan for 3-4 hours or until it comes just over the top of the pan.
  • Bake at 350℉ for 30-35 minutes or until the top has turned brown.
  • Brush butter on top of the loaf fresh from the oven for a buttery soft loaf.

Home Birth Midwife: How to Find the Perfect for You Midwife

Finding the perfect home birth midwife is no easy task! Whether you are new to home birth, recently moved to a new area, or are looking for a new midwife for whatever reason we are here with all tips and resources you need on your journey. Plus, stick around to the end to get a free printable questions list!

What is Right for You?

You can’t find a home birth midwife that is right for you if you don’t have an idea yourself of what is right for you.

Take some time and consider what you want for your birth. Are you looking for someone with a very hands on approach? A midwife who wants to walk the whole road of labor right beside you. Do you need/want that kind of guidance or female companionship through your labor?

Maybe you want a hands off approach. A midwife that doesn’t step on the scene until pushing or birth itself, allowing you the space to labor on your own with your spouse in a more intimate labor. Do you want a lot of monitoring or cervical exams? How about prenatal screening? Do you want a provider who “requires” certain tests or exams, or would you like your provider to respect whatever you feel is best for yourself and baby?

Envision what you think you would want for your prenatal care, labor, and birth then search for a provider that aligns with that. All midwives are different even though the model of care should be similar. Finding someone that aligns with you and makes you feel safe and respected is essential for homebirth success.

How to Find Midwives in Your Area

We dove into this topic in a recent post about How to Start Your Home Birth Journey. Knowing where and how to find a midwife can be a daunting task, especially if you are brand new to this process. Here are a few things to consider….

  • Join groups on Facebook. Join a home birth group on Facebook for your area. This is a great way to get personal recommendations from other like-minded women and find out who is available to you.
  • Google Search. Many practices and midwives have websites or at very least social media now. A basic Google search for midwives in your area may help you find who you need! 
  • Word of mouth. As you meet and interview midwives, ask them who they know in the area! Midwives often work very closely and many have a large community of other providers they know and trust. If you find midwives you like but they are booked up, unavailable, or too far away ask them who they know!

Using these resources, hopefully you are able to gather a list of several midwives that interest you. Now you can begin the process of setting up interviews!

Setting Up Interviews to Find a Home Birth Midwife

Midwives on your list can usually be contacted via email, website, or phone. As you reach out here is some initial information you will want to include…

  • Estimated due date. You may or may not know your due date at the time of contacting possible midwives, however knowing a rough estimate or the exact “due date” is helpful. Many midwives are booked out for months and some may not be available to attend your birth. This is good information to get out of the way before going further with the interview process.
  • Location. Some midwives only service very specific areas. Others are willing to travel quite a ways for a birth. Be sure to offer your location to see if you fit in their scope of care.
  • Home birth experience. It is also helpful for a possible midwife to know what your past experience is with midwifery care, if any. If you are brand new to this experience she will likely walk you through everything in much more detail than if you have had a home birth in the past and are somewhat familiar with the process.

The Home Birth Midwife and Her Personality

After interviewing many home birth midwives, and as you interview them, one of the most important things to look for is how well you interact with her. If her personality is off-putting, you feel the least bit uncomfortable, etc. she probably is not the one for you.

A perfect for you midwife should feel like one of the most safe, warm people you have ever met.

This lady is going to be in your most intimate space, walking with you through months of pregnancy, maybe hard decisions, labor, and postpartum. Call me crazy, but I think making sure the chemistry is right is so important. If you feel “off” about her personality wise or even professionally you are not going to trust her judgment with your care.

Transfer Rate

A common question to ask when trying to find a home birth midwife is, “What is your transfer rate?”. Meaning, how many pregnancies/births does she have to transfer to an OB or birth center? How many of these transfers are preventative and how many are emergency?

An experienced midwife with many years of practice SHOULD have some medical transfers whether preventive or emergency.

Often her transfer rate tells a story- very few transfers means she may be willing to take risks you are not comfortable with. Too many transfers may mean she is against all risk. This is where personal preference and communication/questions come in!

Steps for Making Dill Chicken Salad

Making your own dill chicken salad is a very easy and easy process. Here’s how to do it…

Begin by boiling washed chicken and shredding. The easiest way to shred chicken for this recipe is in a stand mixer with the frosting attachment. (This trick is a game changer!)

After the chicken has been shredded, season the chicken with salt and pepper then allow to cool completely before adding the mayo. Add more mayo if you like your chicken salad a bit more wet.

Next, add the dill relish or chopped pickles and seasonings. Seasonings should be added to taste!

Allow the chicken salad to chill (can be eaten warm if preferred) in the refrigerator for several hours or overnight for best results. Serve as a sandwich, with crackers for dipping, or simply as is.

Storing and Freezing Dill Chicken Salad

Dill chicken salad can be stored in the refrigerator for up to five days in an airtight container. It can also be frozen however, you will need to follow a few simple instructions…

  • Freeze in an airtight bag or container.
  • For short term storage (up to six weeks), freezing all the ingredients together is fine. After six weeks you may notice the mayo starting to separate in the thawing process.
  • Storing past six weeks, it is best to freeze the dry ingredients like chicken and seasonings and add the wet (mayo and dill relish) later on.
  • Thaw in the refrigerator for best results.

Two Under Two Tips for the Overwhelmed Mom

Welcome to the two under two tribe! This is a very special, and sometimes overwhelming season of motherhood. There is nothing super special about having your babies close together, but it does come with special challenges and blessings. Come get all my tips for surviving and thriving as a two under two mom.

Tips for two under two for pregnancy, postpartum, and beyond!

My Experience with Two Under Two

If my two under two experience could be summed up in one sentence…”We loved it so much we decided to do it AGAIN!”

I am writing this post right before the arrival of Miss Three Under Three! The two under two stage is certainly not without its challenges. It is hard work! However, the blessings far outweigh the challenges in my opinion. Here is a bit about my personal experience in this season.

We found out we were pregnant with our second daughter just four months after our first was born. This was not necessarily an “accident” but we were not avidly trying either. Regardless, we were thrilled and shrugged off the negative vibes from some other people who felt we were moving too quickly (two under two problems, right!?).

Fourteen Months Apart

Our babies were born fourteen months apart, the oldest still such a baby in many ways. Very few people realize how physically demanding this season can be, or the vast difference in development between one year and two. I am not here to complain at all but often I found myself feeling alone from this lack of understanding. That is why I am writing this post and maybe a few more on the topic of two under two.

Only mamas who have been there truly understand. If you are feeling exhausted, alone, misunderstood, or any other feeling I can just about promise I was there in the two under two season. So much joy mixed with so many other emotions! If you have, or are expecting your two under two I want you to be encouraged by this post. Here are a few things to remember….

  • This is just a season.
  • You have a lot going on physically, mentally, and emotionally- and that’s okay!
  • You are enough!

Now let’s dive into those tips!

Pregnancy Tips On the Way to Two Under Two

The beginning of a good two under two story starts with a barely toddler baby and two pink lines! Yep- You just became apart of the two under two tribe!

Whether this though thrills you or you have the “accidents happen” mindset you are about to enter a super fun season full of blessings and joy. Watching your babies (literally!) grow up together is the best! Depending on who you talk to this is going to be the best, or worst, time of your life.

Can I just say first off, it is 100% what you make it! The pregnancy, the birth, the toddler/newborn season- all of it. Your attitude will determine the course of this season so my first tip- fix your headspace!

If you are having a lot of negative thoughts about your pregnancy or doom and gloom ideas about how hard two under two is going to be you need to shift toward the positive. (That is why this blog is a great place to hang out!) I am in no way saying it is all sunshine and rainbows. However, your outlook does matter.

My Pregnancy Tips

Honestly, my second pregnancy was amazing! Even with a less than/barely one year old. However, I also had a very easy pregnancy (very little nausea, no major issues/complications, etc.) and I want to be very upfront about that. You could definitely say I got off easy!

Here are some things I found super helpful…

1. NAP TIME.

The absolute best part about a two under two pregnancy is that the oldest likely still takes a nap or is still in a crib, confined, so you can take a nap! During the first trimester I capitalized on this and took a nap. In the second trimester this was my time to get all the things done! Third trimester, it was relaxing in a bath, nesting, or resting. Do not take the fact for granted that you likely still have a good napper and/or an early bed-timer!

2. Spend quality time with your toddler.

(I am using the word “toddler” for the oldest child who may or may not be a toddler at this point in your pregnancy.) Do not allow this season to go by without spending all that quality time with your toddler. Read all the books, embrace all the snuggles, enjoy all the moments because after you have that baby something happens to your toddler. They look bigger. Act bigger. And you do not get these days back!

3. Monopolize your postpartum prep.

I know how hard this is because your oldest is so needy and you have to constantly watch them. However, anything you can prep for now is one less thing you have to worry about later. I mean things like meal prep (especially breakfast and lunch for yourself!), simplifying toy space for oldest, cleaning, etc.

4. Teach your oldest.

This may sound harsh but whatever “problems” you are having with your toddler are not going to magically disappear when they become a big “sis” or “bro”. If they are unkind to other children, they will 100% be unkind to your newborn. If they do not respond to simple commands like “no touch” or “come here” now they are not going to when you are confined to feeding a baby.

Even if your oldest is quite young during your pregnancy you can begin teaching these commands as soon as you notice them touching the forbidden (electrical sockets!), or crawling towards a specific direction. You can begin to teach what is socially acceptable as soon as they hit that kid at the park or take a toy from a cousin. The sooner you begin the better off you will be when the baby enters the scene. You are not expecting perfection, just the beginning of a basis and understanding in acceptable/unacceptable behavior.

The Newborn Stage with Two Under Two

The newborn stage with two under two is one of the most exhausting stages of motherhood. Not to be discouraging, it is filled with wonderful moments too! However, it can be very draining. You are still trying to adjust to a brand new baby, your body is healing, and this other little, but bigger, person still needs you- a LOT! Here are some tips for survival…

1. It’s okay if you are not thriving.

Our culture has glorified thriving in every season and sometimes life is just not that way. Yes, we should try to do our best and there is so much grace in hard times of life. However, sometimes, life is survival. And if you find yourself there instead of “enjoying every moment” there is nothing wrong with you.

2. Support system.

I say this lightly because we do not all have this incredible web of support always at our finger tips. (If you do, that is great! Use it!). Yet, even those of us who live a bit distant from family or close friends probably have people in our lives who are willing to help us. Maybe we would not trust them to come sit with our children while we nap but they can (and probably would love to!) bring a meal or run an errand for you. The point- whatever your support system looks like, use it. Do not be afraid to ask for help.

3. Safety zones.

Newborn safety around a barely toddler is no joke! Even things like a swing, rocker, lounger, etc. have to be constantly watched. Learning where you can safely put baby down is key. My tips- their crib in another room (make sure toddler has no access; they can still throw toys over the sides, poke eyes, etc.), your bed (if toddler is incapable of climbing in), baby gate the toddler in a safe zone while baby swings, sleeps, etc. Last but not least is baby wearing! They are safest on you and you can have your hands free to tend to toddler needs.

4. Never blame the baby.

This one is big if you want to be careful about not building resentment in your toddler. If your toddler is asking for attention, never use language like, “I can’t because sister is eating” or “Not right now because your brother needs me”. This places the blame on the baby and builds resentment in little hearts. Instead of focusing on what you cannot do with them, focus on what is possible, allow them to help, or make them apart of the process. Things like, when baby eats, they get a snack. When mom has to change a diaper, they get to help. Let them be apart of the “fun” as much as possible.

5. Remember your toddler is still a baby.

Keep your expectations reasonable. Your “big” kid is really still so little- a baby, truly.

6. Special gift.

We do this for our older children when we welcome a new baby. A new toy to play with, game, or special thing just for them. This helps keep them entertained during that transition period as you welcome a new member into your family.

Self Care Tips

I will save my opinions about self care as a mom for another post. By self care I do not mean pampering, but the essential things such as sleep, hygiene, eating, and general care for your body. Here’s some tips for taking care of you….

1. Personal shower time.

Maybe this means you have to wake up early, stay awake later, or work out a system with your spouse. However you have to do it (SAFELY), finding time to take a shower, alone, can be a great way to reset your brain and get some much needed hygiene in there!

2. Feed yourself well.

As we talked about in another post, eating well is so important as a mom- especially when you have two close together. Focus on nutritional, nourishing meals. Read here to learn more about Why Moms Need More Protein!

3. Sleep.

I am not here to tell you exactly how many hours of sleep you need to be getting. We all know the numbers and as two under two moms this is just discouraging, because you likely are not getting the recommended amount! However, trying to prioritize your sleep is so so important. If you feel yourself not getting good rest for several days on end this may be the time to reach out to your support system and ask for help.

4. Getting a break.

Nap time is perfect for catching a break- as long as everyone is napping on the same schedule (and sometimes they just don’t!). I definitely recommend trying to synchronize nap times as much as possible. When this does not work out you can set up a safe play area for toddler or baby and try to enjoy your own space for a few minutes!

5. Do something you love.

This may sound impossible in your current season but if you can find a “thing” that is relaxing to you, a creative outlet, whatever! It is so good for many personalities to have an outlet of some sort, even moms!

Getting Things Done at Home

Not only was I a two under two mom but I am also a homemaker. I also cook the majority of our meals from scratch. I also don’t own a dishwasher….

This means I have no choice but to get things done- even with my very needy two under two. Honestly, I love it! While it took a while to find my new routines, once found, keeping up with this little home and my little people has become a joy!

Here are some helpful tips….

1. Give yourself and your home some grace.

Especially in the newborn to about six month season with the new baby, give yourself some grace. You don’t have to get it all done. Your home does not have to be perfect. Read here about How to Handle Seasons of Bare Minimum in Motherhood!

2. Do what you can when they are awake.

For some personalities this may sound stressful but getting things done while my kids are awake is how I thrive! This gives me my afternoon nap time to do things that spark life or those bigger jobs I cannot tackle with littles under my feet.

3. Baby gate.

Get over the mom guilt! Leaving your kids in a safe space to play (together or apart depending on ages and stages- safety first!) while you get something done does not make you a bad mom! Science shows that allowing children independent playtime apart from you is great for skill and brain development. I am not talking about abandoning your child in a room for hours while you watch Netflix and chill. However, a safe play zone while you do laundry without being tackled will absolutely not hurt your children.

4. Screen time.

I am a huge advocator for minimal screen-time. There are just so many better ways to entertain children that actually work! However, there are times when I’m home solo parenting after a long day, people are not playing nicely, and I have to get something done. In our home this is a great time to bust out that special treat called screen time!

The Beginning of Your Home Birth Journey

The beginning of a great home birth journey starts with that pretty pink line- “positive”! (Unless you have already decided on home birth or have had previous births at home.) We are writing this post specifically to those who are unfamiliar with the home birth process. Hopefully this post will give you a better understanding of all the information you need.

As a first time home birthing mom, welcome! We are Anna and Tori- moms of some awesome kiddos and a couple on the way. Anna is a first time (hopefully) home birth mom who is walking all these first time steps with you! Tori is a mom of (almost) three- one sweet and successful home birth, and another happening (hopefully) any day now.

We love sharing our tips on natural birth, pregnancy, and now, home birth from a fresh perspective as we are walking through it ourselves.

Finding Midwives in Your Area

Okay, so you have decided home birth is exactly what you need for this birth to be everything you want. You feel complete peace about your decision. Next step- finding that perfect for you care team!

We will go into much greater detail about this in a coming post with FREE resources so make sure you join the email list at the end of the post!

However, the process of how to find a midwife and where to even look can be daunting if you have never gone through it before.

Here are some of our tips for how we found our super amazing care teams….

  • Check out state laws before you begin your search. Different states have different laws regarding home birth. Some only allow a CNM (Certified Nurse Midwife) to practice legally (though you can still find an underground CPM [Certified Practicing or Professional Midwife] if that is what you prefer). States also have different laws regarding who can legally home birth, how many weeks minimum and maximum gestation, etc. Start by getting a base knowledge of what this looks like in your state.
  • Join groups on Facebook. Join a home birth group on Facebook for your area. This is a great way to get personal recommendations from other like-minded women and find out who is available to you.
  • Google Search. Many practices and midwives have websites or at very least social media now. A basic Google search for midwives in your area may help you find who you need!
  • Word of mouth. As you meet and interview midwives, ask them who they know in the area! Midwives often work very closely and many have a large community of other providers they know and trust. If you find midwives you like but they are booked up, unavailable, or too far away ask them who they know!

Understanding the Difference in a CPM and CNM

We mentioned this briefly above when mentioning state laws. Here is some more information on the different types of midwives….

A CNM is a Certified Nurse Midwife. They tend to operate on a more medical base of knowledge and less of a physiological, however that’s not the case for all so be sure to do an interview if you have any interest in their advertised services.

A CPM is a Certified Professional Midwife. They tend to operate with more of a physiological approach. Often using very old tried and true practices over standard medical procedure. Again, this is not the case for all of them so do an interview if you think you could connect well with a midwife’s practice.

Remember, most home birth midwives are in their line of work because they wanted something different than what the medicalized birth world had to offer them. So you’re likely to connect to either. Don’t write one off just because of their title.

Student Midwives. The way midwifery care is designed allows midwives in training to get their hours for certification while working alongside an experienced midwife. Usually, there will be a student working with the midwife you choose. Be sure to ask them about meeting her as well!

Setting up Interviews for Your Home Birth

Setting up interview can be daunting work!

Once you have a few recommendations go check out their websites, online profiles, etc. and see if any of them resonate with you or are a clear no, to help narrow down the search. (Use your mom gut- it’s there for a reason!!)

If you’re looking for a CPM and your state doesn’t allow them to practice you will have to connect with them through personal recommendations. This is where the Facebook group is so helpful. They won’t be able to have a website so ask on the group for CPM recommendations and then ask if you can chat with those women privately about their experience with them.

Get a list together of the ones you have interest in and start making phone calls or sending emails asking for an interview. You can request in person if you’d like or over the phone.

Where to Set Up Your Interview

You’re interviewing someone to potentially invite into your birth space. This is important. You can even have more than one interview if you need it. If it’s in person, try to have it in a place that would make you most comfortable. Be it your home, a local coffee shop, the park, etc.

Some midwives work in office and you will be seen there for appointments. If you want to check out their office space the initial interview is a good time to do that. If you are in their office now is a good time to consider a few things like their organization, their hygiene, and how they treat patients.

This may seem judgmental or harsh but these things all tell a story about how this midwife operates and what her care style is. If she’s messy, her office is untidy, and she doesn’t have basic hygiene that is how she will care for you at appointments and throughout your birth. (Give some grace too- we all have messy days! Just trust the vibes you are getting.)

Next Steps on Your Home Birth Journey

Well by now you are probably overwhelmed with all the homework you have just trying to find a midwife! It is serious work. Here are a few other things you will want to do in the first trimester as you begin the home birth journey….

Confirmation Appointment

Your midwife will likely ask you to do a confirmation ultrasound to date your pregnancy and make sure that it is a viable pregnancy (not ectopic or chemical, etc.). This can be done alongside your midwife or through a OB-GYN provider, preferably sometime in the first trimester. If you have not settled on home birth for sure or you are struggling to settle on the right midwife you can go ahead and schedule a pregnancy confirmation with your OB’s office.

Most OB-GYN offices will schedule a confirmation sometime within 8-12 weeks of your last missed period. If you choose to get the confirmation before settling on midwifery care/ home birth, my advice is, do not specify these details. Just get confirmation.

Many in the medical field are opposed to the home birth community. Most mean well but are very confrontational and or rude about your decision to birth how you desire. Some will not even see you if they know you are having thoughts or are decided on midwifery care and home birthing. If that happens your midwife will likely have an OB that she works with regularly for these ultrasounds that she can refer you to.

Your First Home Birth Appointment

Sometime around or after your confirmation ultrasound, you will want to have your first appointment with the midwife (this is apart from an interviewing appointment). This appointment will look different for everyone so we will not go into long detail. However, here are a few things you can expect…

  • It might feel a little bit awkward as you both get to know one another but you should feel comfortable. If she, or anyone in the practice, makes you feel uncomfortable you need to find another provider.
  • Most midwife providers schedule your visit for at least one hour, sometimes longer for a first appointment. So don’t be rushed, take your time and ask all the questions!
  • She will ask you basic questions like how you have been feeling, may give you some tips for how to cope with first trimester discomforts, past birth history (if applicable), diet/exercise habits….and she will probably sprinkle in some small talk to get to know you!
  • She will monitor blood pressure, heart rate/oxygen, belly measurements (maybe not in early appointments), and baby’s heart rate (if after 8 weeks or so) at every appointment. As baby gets bigger she will monitor positioning of the baby and growth (based on feeling of head, bum, etc.).
  • Again, ask all the questions!
  • Before she leaves she will schedule you for your next appointment. Most midwives work from a monthly appointment basis until around 32-36 weeks. From there you will be seen every two weeks until 37-38 weeks. Then every week until your baby is born.

How to Use Your Sourdough Buns

These onion and poppy sourdough buns are great to use with so many recipes! The sweet, caramelized onions and the poppy seeds create a flavorful spin on a classic bun recipe. Here are some of my favorite ways to use this recipe….

  • Hamburgers. Using these buns with hamburgers or cheeseburgers just takes it up a notch!
  • Chicken Sandwiches. Chicken based sandwiches like chicken salad, and grilled or fried chicken breasts pair perfectly with these buns.
  • Deli Meat Sandwiches. Classic turkey or ham and cheese between these sourdough buns are delicious!
  • Dinner Rolls. These buns can easily be turned into a buttery, flavorful dinner roll to pair with all your favorite dinner meals!

Sourdough Bun Ingredients

The ingredients for onion and sesame sourdough buns are very simple! Here is all you need…

  • 1/2 cup sourdough start (active or discard)
  • 1/2 cup warm water
  • 2 tbsp honey
  • 1/4 cup melted butter
  • 1 1/2 tsp salt
  • 2 tsp baking powder (optional; best for discard)
  • 2-2 1/4 cups all-purpose flour
  • 1/2 cup yellow onion
  • 2 tbsp honey
  • 1/4 cup butter
  • 2-3 tsp poppy seeds

How to Make Sourdough Buns

Making these sourdough buns is very simple and an easy task that even beginners can master! My approach to sourdough is the more simple the better. That is why these buns can be made with active or discard starter. You can also ferment them if you choose or simply make right away!

1. Begin combining your starter (active or discard) with water. Allow to sit a few minutes to better dissolve the starter.

2. Add in honey, melted butter, salt, baking powder (optional; for softness and best if using discard), and 1 1/2 cup of flour.

3. Add in the flour 1/4 cup at a time until the dough is slightly sticky but firm and stretchy.

4. Allow dough to rise about two hours.

5. OPTIONAL FERMENTATION STEP. This step is completely optional. However, if you desire the added benefits of fermentation, after the first rise shape your dough into a ball. Refrigerate for 8-12 hours.

6. While the dough is rising, dice 1/2 a large yellow onion. In a skillet, on medium high heat melt 1/2 stick butter. Add honey. Cook the onions in melted butter and honey mixture until they begin to turn light caramel brown in color. Allow onion to cool completely before topping the dough. Save remaining butter to top buns.

7. After the dough has risen (or fermented), shape into a ball on a well floured surface. Divide the dough as evenly as possible into eight pieces. Shape into buns by rolling the pieces into a ball and pressing flat with your palm.

8. Allow the dough to rise about one hour in a 9×13 casserole dish. Top with onions, butter, and sprinkle poppy seeds lightly on top.

9. Bake at 350 F for 12-15 minutes or until tops turn golden brown.

Storage Tips

You likely will not have many leftovers- these buns are so good! However, should you need to store them follow these tips…

Store your buns in the refrigerator using a ziplock bag for best freshness. The moisture from the onions can cause the buns to spoil faster than usual. Use within 5 days of baking for best results.

Oatmeal From Scratch

What is so special about blueberry oatmeal from scratch? Big box brands make easy, convenient packages that are pre-made after all! Let’s talk about ingredients…

Yes, instant oatmeal packets are convenient. However they contain many unnecessary, and not so great ingredients. Around here we are all about cooking from scratch when possible and avoiding chemicals and preservatives in our food sources.

Most store-bought, instant oatmeal options contain about eight ingredients. Honestly, compared to most convenience foods this is not too bad. However, many of these ingredients have been processed and some (like preservatives) are unnecessary when you make your own oatmeal from scratch.

The taste of from scratch baked oatmeal is significantly better as well! Not to mention that you get much more yield out of this recipe than you do the instant oatmeal packaging, meaning it will last longer and feed more people. Everything tastes better from scratch and your wallet will thank you too!

Breakfast or Dessert?

Although this recipe is technically considered breakfast, this blueberry baked oatmeal is so delicious you could serve it as a dessert! Serve it fresh and warm from the oven topped with vanilla ice cream and you will not be sorry. Whether breakfast or dessert here are a few ways to make this recipe even more delicious….

  • Serve with fresh cream or ice cream. As already mentioned, this baked oatmeal served warm with ice cream is a treat you do not want to miss out on! If you are making it for breakfast, serve with fresh cream or top with homemade whipped cream.
  • Sprinkle with cinnamon or powdered sugar. Just a small dash of cinnamon or a sprinkle of powdered sugar takes this recipe up a notch!

The Overnight Method

Your blueberry baked oatmeal can be made as is or prepped using the overnight method. This method is great for busy moms (me!) who want to get a few steps ahead of the morning to do list. Here is how the overnight method works…

  • Mix all the oatmeal ingredients (except blueberries) the night before and place in the refrigerator until morning. You can also mix up the topping ingredients (everything except the butter).
  • This allows the oats to soak in the moisture of the milk and egg, as well, for better digestion and a more moist texture.
  • Bake as instructed.

Ingredients for Blueberry Baked Oatmeal

All the ingredients you need to make blueberry baked oatmeal are simple and you probably have most of them in your pantry now. Here is a complete list of what you will need and a list of substitutions…

  • 2 cups old fashioned oats
  • 2 cups milk
  • 1/3 cup cane sugar
  • 1/4 cup brown sugar
  • 2 tsp cinnamon
  • 1 egg
  • 1 tsp baking powder
  • 1/2 pint fresh or frozen blueberries (about 1 cup)

Streusel Topping

  • 1 cup oats
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp salt
  • 1/2 cup butter (one stick)

Substitutions for Blueberry Baked Oatmeal

Cane sugar. The cane sugar can be replaced with maple syrup or honey for a healthier, lighter sugar alternative. Replace using equal measurement.

Brown sugar. Use equal parts brown coconut sugar as a less processed, more natural substitute for brown sugar.

Cinnamon. The cinnamon is completely optional but does add flavor.

Butter. Butter can be substituted with equal parts melted coconut oil if desired.

Storing Your Blueberry Baked Oatmeal

Blueberry baked oatmeal is without a doubt best fresh! However, it can be made and stored for eating throughout the week in a glass container with a lid. Store in the refrigerator for up to five days and use as needed!

Tip: If you have leftovers they are best reheated in the oven vs the microwave.

Simple Blueberry Baked Oatmeal

Delicious and simple baked blueberry oatmeal recipe with crunchy streusel topping.

Ingredients
  

  • 2 cups old fashioned oats or protein oats
  • 2 cups milk
  • ⅓ cup cane sugar or honey
  • ¼ cup brown sugar or coconut sugar
  • 2 tsp cinnamon optional
  • 1 egg
  • 1 tsp baking powder
  • 1 cup fresh or frozen blueberries

Streusel Topping

  • 1 cup oats
  • ½ cup all purpose flour
  • ½ cup brown sugar
  • ½ tsp salt
  • ½ cup butter one stick, melted

Instructions
 

Overnight Method

  • Mix oats, milk, sugar, brown sugar, cinnamon, egg, and baking powder in a large mixing bowl or bowl of a stand mixer. Cover and place in the refrigerator overnight.
  • Combine topping ingredients, leaving the butter out for now, and place in a cool, dry place or plastic bag overnight for use in the morning.
  • When ready to bake, remove oatmeal ingredients from refrigerator and place in a well greased 9×13 baking dish. Gently fold in fresh or thawed blueberries.
  • Bake at 350℉ for 15 minutes.
  • While oats are baking, melt butter and add to topping ingredients. Stir in until well combined. Texture should be like a thick granola.
  • Remove oats from oven after baking 15 minutes and add topping, pressing gently into the oatmeal with a fork or spatula.
  • Bake an additional 20-25 minutes or until topping is golden brown.

Instant Bake Method

  • Combine all the oatmeal ingredients, except the blueberries, in a large mixing bowl or bowl of a stand mixer. Place in a well greased 9×13 baking dish and gently fold in blueberries.
  • Bake at 350℉ for 15 minutes.
  • Combine all the topping ingredients (same bowl you used for oatmeal can be used). Stir until well combined. The texture should be like a thick granola.
  • Remove oats from oven and top with streusel topping, pressing some of it down into the oat mixture.
  • Place back in oven and bake an additional 20-25 minutes or until topping is golden brown.

Is Home Birth Right for You: Everything You Need to Know

Considering a home birth but not sure if it is the right decision for you? Here is some insight from two moms- one home birth and two planned for this year! Here’s what you need to know….

Who Should Not Consider Home Birth

There are very few cases where a home birth should not be at all considered. However, we always seek to view things in a very balanced way. For this reason I think it is important to note that home birth is not for everyone.

Personal comfort, preferences, home environment, etc. can all be a factor. As far as reasons you should absolutely not consider home birth, if you have a medical condition that makes home birth extremely unsafe for you or your baby and could be served better by the hospital environment.

After all, the reason we chose homebirth is because we feel it is the safest place to deliver our babies. If we didn’t feel that way and have the research to back it, we wouldn’t consider it. However, not everyone is in the same circumstances. We don’t all have the same health. There are cases where a hospital is a safer choice. Do your own research because these cases are less than what is typically presented to you.

For instance, wanting a VBAC doesn’t completely exclude you from home birth. However, the risks are different for you, so weigh them for your circumstance. In cases of preeclampsia of preterm labor, going into the hospital setting would serve you much better and home birth should not be considered.

When Home Birth is No Longer an Option

You may desire, even long for a peaceful, quiet home birth but you have a medical condition that makes you or a healthcare provider alarmed. This is definitely a valid reason to give pause to the thought of pursuing a home birth. You may find exploring more options (like a birthing center) is best for you.

It is also important to realize that at any point in pregnancy a condition may arise that would put you or baby at too much risk for a safe home birth experience. That is hard to embrace but should be taken into consideration. For this reason I prefer to say, “We are hoping to have a home birth- if all goes well throughout the pregnancy”. This takes the pressure off myself and places the expectations for a happy, healthy home birth at a realistic level.

Don’t be so set on your plan that you accidentally put baby or yourself at risk. Be balanced in your mind and understand which case calls for which environment or intervention. While birthing at home is a wonderful experience it is so important to trust your provider and your gut when it comes to baby’s safety and best interest.

Who Should Consider Home Birth

Any mama of a healthy pregnancy who desires an unmedicated birth with little or no interventions should consider a home birth! Birth is a natural, in most cases, safe part of life. It is not an illness that requires treatment.

While there is definitely a place for modern medicine and we are so thankful for its availability, a healthy pregnancy should not warrant cause for a hospital stay. Home birth, under midwife supervision, has been safely practiced since ancient times. Yes, there are risks involved in any birth and we are not saying that there are not benefits to a hospital birth that some might find to be more comfortable.

And that is okay! It is a free, personal choice in today’s world. Since you are here we assume you are at least entertaining the idea. So here are some indicators home birth might just be a good option for you…

  • if you truly want a natural birth experience.
  • you want a very personal model of care.
  • if you want a peaceful, quiet birth
  • you do not want any unnecessary interventions during birth
  • if you want immediate and uninterrupted bonding time with your baby
  • you have a good support system (not absolutely necessary but very helpful!)

Following Your Intuition

As stated before it is very important that you listen to your intuition when it comes to the decision of having a home or hospital birth. We don’t mean to sound “woo-woo” but we both believe that gut feelings as a mom can often be a means of God guiding us and the decisions we make. It is so important to never ignore that inward tugging.

Confidence in Your Care Team

As you decide if home birth is the best decision for your family make sure you consider options you feel confident in. This is especially true when it comes to selecting your care team. This will include a midwife, often an assistant or two, and perhaps a doula if you prefer one.

Finding the perfect for you midwife can and should be a somewhat daunting task. You are in complete control of choosing who will help guide you through the important decisions of bringing your baby into the world! (We will dive more into this process of selecting a great midwife in a later post so make sure to subscribe to the email list so you do not miss it.)

If you do not have complete confidence in midwifery care in general I highly suggest researching the statistics on midwifery vs OB care. Study the differences in a Certified Practicing Midwife (CPM) and a Certified Nurse Midwife (CNM). Choose according to your personal comfort level. Many midwives will have additional training and certification in things like breech birth, infant care, lactation consultation, etc.

Another key thing to note when it comes to having confidence in your care is that many states in the U.S. have differing laws when it comes to who may practice home birth. North Carolina, for instance, has very specific laws. They do not allow midwives to attend breech birth, the mother must be in active labor by 41 weeks, 6 days for a midwife to legally attend the birth, and minimum gestation length for attending midwife to comply with state law is 37 weeks. Researching your state laws regarding home birth is highly recommended as you consider if home birth is best for you.

Prayer

We prayed a lot about where to deliver Jackson and the Lord led us to a further away hospital that had a NICU to establish care with from the beginning. Not only did they meet most of the desires I (Anna) had for our birth, but Jackson ended up coming early. Had we not had established care with a facility already having an in-house NICU, it would’ve been much more stressful when I went into unexpected labor. The Lord knew and guided us in that direction from the beginning.

With this pregnancy, we were led to homebirth. Previously, while I greatly supported homebirth, I had no interest in it for myself. The Lord led differently this time, and I trust His guidance.

Homemade Flatbread vs Store-bought

This bbq chicken flatbread is so easy to make it really makes justifying buying store-bought flatbread hard! However, you can find pre-made flatbread in most bakery departments in local grocery stores that are decently fresh. Of course around here we are pretty much always going to suggest the “from scratch” version!

That is why I share recipes that are from-scratch but just as simple as going to the store and buying it off the shelf. No extra steps. No complicated ingredient lists. Just simple, from scratch options that you can make in your own kitchen quickly!

Here is why it is worth it to make your own flatbread…

  • Cheaper! Making your own flatbread at home is much more affordable than purchasing them pre-made from the bakery.
  • Low mess. This flatbread recipe only takes one mixing bowl. Just throw all your ingredients in and go!
  • Super quick! The amount of time it will take you to make this from scratch flatbread is quicker than you can get to the store and back. It takes less than five minutes of prep time and only about fifteen minutes to bake this bbq chicken flatbread recipe.

BBQ Chicken Flatbread Ingredients

The ingredients you need to make this bbq chicken flatbread are simple! Here is everything you need along with a list of substitutions….

  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 cup hot water
  • 1 tbsp. olive oil
  • 2 chicken breasts
  • ½ onion optional
  • 1 cup Kinder’s BBQ sauce
  • 2 cups shredded mozzarella cheese 
  • ¼ cup fresh herbs optional; for garnishing

Substitutions

Olive oil. Any oil or butter base can be substituted based on your preference and availability of ingredients.

Bbq sauce. Kinder’s bbq sauce was used on the pictured flatbread, however you can use whatever sauce you have on hand or a family favorite of your choice!

Mozzarella cheese. Personally, I found mozzarella to be the perfect flavor combo for this flatbread recipe. However, you could easily use any other cheese or add a favorite shredded cheese combination to make this recipe suitable to your family.

Herbs. The herb garnish is completely optional, it just gave it an extra boost of flavor. Add fresh cilantro, parsley, oregano, or whatever you have on hand!

How To Make BBQ Chicken Flatbread

This flatbread is very simple to make! The quickness comes from following the process I mention in the recipe below. I have found it to be the quickest way to get this meal made. After a few tries and perfecting the process, I can have this meal on the table in under thirty minutes (faster than pizza delivery!).

The process is basically this- dough made/resting, toppings prepped and cooked, flatbread assembly, then baking. You can shortcut it further by prepping the toppings ahead of time, having your chicken cut or even cooked already will speed up the process.

We currently bake our flatbread in the oven, however you could try on a well seasoned Blackstone grill or an outdoor pizza oven for a fun summer dinner!

Quick and Easy BBQ Chicken Flatbread

Delicious, fluffy flatbread made from scratch, topped with your favorite bbq sauce, juicy chicken, and heaps of mozzarella cheese! This quick and easy dinner recipe will soon become a family favorite!

Ingredients
  

  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 cup hot water
  • 1 tbsp. olive oil or melted butter

Toppings

  • 2 chicken breasts sliced thinly
  • ½ onion optional
  • 1 cup Kinder's BBQ sauce or favorite BBQ sauce of your choice
  • 2 cups shredded mozzarella cheese
  • ¼ cup fresh herbs optional; for garnishing

Instructions
 

Flatbread Dough

  • Combine flour, salt, and baking powder in a large mixing bowl. Add hot water and oil (or butter). Mix well until dough is soft and pliable. (The dough should not be very sticky but also not very firm. If it is too sticky try adding an extra ¼ cup of flour.)
  • Roll dough into a ball. Allow the dough to rest while you prep the toppings.

Toppings and Assembly

  • Dice onion and slice chicken into thin strips. Cook chicken (and onions if you prefer) on medium/low heat for best results. Season with preferred seasonings.
  • After toppings have been prepped, divide your ball of dough in half. Roll the flatbreads out on a well floured surface or directly on greased sheet pans.
  • First, apply drizzles of bbq sauce directly to the dough. Add cooked chicken slices, onions (optional), then top with cheese.

Cooking Instructions

  • Bake at 350 ℉ for 15-20 minutes or until the cheese starts to turn slightly brown in some places.
  • Optional: apply a second drizzle of bbq sauce and freshly chopped herbs to the top of your flatbread before serving.

Who doesn’t love fresh, homemade whipped cream on top of pancakes, coffee, or a slice of pie? This recipe is so simple and you can “whip” it up in a flash! Get all the info you need in this post….

Why Homemade?

You can always buy a container or can of whipped cream from the grocery shelves. However, for these reasons I highly recommend making your own homemade whipped cream….

Unhealthy/unnecessary Ingredients

The only ingredients necessary to make a great whipped cream are heavy cream, powdered sugar (or cane sugar), and vanilla extract (completely optional). Yet a store bought tub of whipped topping contains over 15 ingredients! These include corn syrups, vegetable oil, preservatives, and even coloring.

Sugar Content

Another reason to consider homemade is the ability to control the sugar content. You can go as sweet or plain as you want. Swap the powdered sugar for honey, maple syrup, or cane sugar for a healthier sweetener.

Tasty and Simple

Honestly, the taste of homemade whipped cream is just better- fresher! It also take zero effort to make. If you are wanting to make some from scratch swaps in your kitchen this year this is a super simple place to start- even for beginners!

Recipes to Use Your Cream

You can use this homemade whipped cream on any recipe that requires store bought cream. Here are a few favorite ways to use it in our from scratch kitchen….

Pancakes

Pies, Cakes, and Other Desserts

Really this cream is delicious on any pies, cakes, and other desserts that call for whipped cream. Some of my favorites are apple pie, this lemon bread, and strawberry shortcake!

Ingredients for Homemade Whipped Cream

Homemade whipped cream requires only two ingredients- heavy whipping cream and a sweetener (powdered sugar, honey, stevia, maple syrup, cane sugar, etc.). The sweetener you choose may slightly effect the coloring of your cream so keep that in mind. However, I have used honey, powdered sugar, and cane sugar, all have yielded very similar results in texture and taste.

You can also add in a flavoring as an optional ingredient- such as vanilla extract, almond extract, orange, etc. Start by adding flavoring in slowly (1/4 tsp at a time) until desired results are achieved.

How to Make Homemade Whipped Cream

Making your whipped cream is easy and requires very little effort. However, it does require a tool that can whip up the cream enough to get it stiff. This is extremely difficult to do by hand because it requires intense mixing and high speed. Here are my preferred methods…

Emersion blender

This is the quickest and easiest way to make homemade whipped cream, especially in small batches. Simply pour your cream into a glass mason jar (wide mouth, quart size is preferred) and blend until stiff. Emersion blenders are affordable and easy to use/clean.

Stand mixer

Another way to make your whipped cream is in a stand mixer. You will want to use a frosting attachment or whisk attachment. Begin on medium-low speed. Slowly increase the speed until the cream is stiff and smooth.

Storing Tips

Whipped cream can be stored in a mason jar or an airtight container in the refrigerator. Use within one to two weeks for best freshness.

Easy Homemade Whipped Cream From Scratch

How to make delicious, homemade whipped cream from scratch with simple ingredients! Make this smooth whipped cream that melts in your mouth in just minutes using this go to recipe!

Ingredients
  

  • 1 cup heavy whipping cream
  • 2 tsp powdered sugar (or sweetener of choice; SEE NOTE)
  • ¼ tsp vanilla extract optional

Instructions
 

  • Combine heavy cream, sugar, and vanilla (if desired) into a stand mixer bowl or glass jar (for emersion blender method).
  • Mix on medium-high speed for about 2 minutes or until the cream becomes stiff and smooth.
  • Serve as is or chill in the refrigerator for 30 minutes before serving for best results!

Notes

NOTE: Powdered sugar can be substituted with cane sugar, honey, maple syrup, stevia, etc. Slight changes may occur in texture and color depending on the sweetener used but you should yield similar results.
