Learn how to make the most out of your meat budget in this post! During this season of economic decline we all want to feed our families well. This can be hard to accomplish without feeling the sting of over priced goods every time we purchase groceries! Meat prices have especially taken a toll these days causing our budgets to bend over a small package of chicken.

Maybe I am the only one who feels this way, but as a stay at home wife I absolutely hate the feeling that I am spending all the money my husband has worked so hard for! I know we have to eat, we have to buy groceries, there is not another economy to buy them in. However I do desire to be wise in this area.

I am no expert by any means! I decided I would throw together a list of a few things that I have been doing to help us save a few dollars and share them here. No matter if you are a homemaker or a career gal I think we can all benefit from these tips! I am sure many of you other ladies have tips as well, please feel free to share your feedback in the comments section below. Let’s help one another out during this difficult season!

Tips on How to Get the Most out of Your Meat Budget

1. Wait for deals on bulk supply.

By bulk supply, I mean large portions of meat. A few good options to look out for are pork butt, brisket, whole chicken, and larger selections of roast. There are a few things that need to be considered beforehand such as- do you have enough freezer space to store it? How should the meat be cooked (does it require a grill, smoker, etc.) and what will you do with it after you have cooked it?

2. Do not make meat the main subject of every meal.

This is a hard one if you are a meat eater! However, try to be more intentional to not make meat the main event. I have three words- beans, rice, taters! These three simple (and inexpensive) ingredients will help you stretch your meats beyond twice the servings. Breads and pastas are also another good way to get more out of your meats. You want to think of heavier foods that will fill you up quicker but at the same time compliment the meats well.

3. Save time and money on your meat budget.

Honestly these days my time is almost as valuable as my money. Because of this I do not just want to focus all my time on saving a few dollars. I find that making large portions of meat all at once, then freezing the cooked meat is the best way for me to get the most out of my time and money. Purchasing meats I can cook overnight essentially allows me to work in my sleep! Cooking meals in the crockpot during the day not only gives me bigger meals but also allows me to save time.

4. A zero waste mentality.

A zero waste mentality may also help you make the most out of your meat purchases. Instead of thinking, “What meal can I make with this?” think, “How many uses are there for this meat?” A good example is this- if you are buying a whole chicken you can get two meals out of it by shredding it up and adding it to rice or a soup. Not only that, you can get six to seven quarts of chicken broth from the bones of that same whole chicken that you can use to make other meals later.

Cooking Ideas that Will Help You Stretch Your Meat

  1. Pork Butt. Cooking a whole 8-10lb. pork butt in the oven or smoker will make you approximately four meals for four people (two meals for eight people). It is not at all time consuming and can be cooked overnight. All it requires is to be shredded, portioned, and frozen.
  2. Whole Chicken. Make a whole chicken in the oven or crockpot. You can shred the chicken and add it to soup, chicken and rice, tacos, etc. The bones and fat can be used to make chicken broth that can be canned and used for later meals. The amount of meals you will get from a whole chicken depends on what you plan to make with it.
  3. Chicken Breasts. Make chicken breasts stretch further by serving with rice. You can season the rice in any way you desire to make the meal more Oriental, Hispanic, Cajun, etc.
  4. Ground Beef. Add onions to ground beef to use less meat. This is perfect for tacos and spaghetti! If your children do not like onions try chopping them very finely and cooking them until they are soft. They will take on the flavor of whatever seasonings you use and will hardly be noticed.

Learning to Make Southern Style Biscuits

It seems like one of the main requirements of being a grandma should be passing down a killer biscuit recipe! Hopefully you had that awesome southern Granny (or you are her!) that did not disappoint you in the biscuit department. For those of us who were less fortunate, we can thank God for a wonderful lady named Sarah Voyles who patiently took the time to teach me!

*Just to be clear, I have two amazing grandmothers and I am very thankful for them both! I am sure they probably would have taught me to make biscuits had we lived a little closer. Due to the distance between us (North Carolina to Michigan) and short periods of time together throughout the years we never got around to biscuits.

Enter Mrs. Sarah Voyles! She is a wonderful wife, superstar mother of ten, “Grand-mommy” to many, and an all around amazing Christian lady.

At age eighteen I had no idea how to make biscuits from scratch. While staying at the Voyles’ home, I was asked to make the biscuits for Saturday breakfast (Saturday breakfast is a pretty big deal!). The task involved making biscuits for up to about fifty hungry people who would gather there to eat and fellowship. Instead of changing her mind and asking one of the many others there who were capable of doing the job on their own, Mrs. Sarah very patiently walked me through the biscuit making process.

Timeout: Some Lessons We Could All Learn From Sarah

  1. Allow others to help! Mrs. Sarah was not afraid to delegate tasks that needed done to pull this breakfast off. I see many women who stress when feeding ten people, much less fifty. Learn to loosen up and let others help out, even if they do not do things exactly like you!
  2. Be willing to teach others. If you know a skill and see that someone else is desiring to learn, help them out! Many women reach the age where they either want to give too much assistance to those who are younger (to the point of meddling), or they give no help/advice at all. Balance in this area is key. We younger ladies need your know how!
  3. Have some patience. When others do not know the things you know, do not be discouraging or negative, just be patient! You did not learn everything you know in a day, do not expect others too. Answer all the silly little questions. Deal with all the many mistakes new learners make with grace and kindness.

Extra: My Big Biscuit Blunder!

I thought I would add this funny tidbit to my biscuit learning story.

With the help of Mrs. Sarah I was able to accomplish the job! We made the biscuits early in the week, froze them, and planned to throw them in the oven when needed. Saturday morning came around and we were all in the kitchen early trying to get things ready for the company coming later in the day. My biscuits looked great! They were the right size and texture, light and fluffy. However, one bite and you knew something went very wrong on my biscuit making journey!

Mrs. Sarah’s teaching style was to give you the necessary information but let you do the work on your own so you could better learn how to do things. I followed all the instructions but somehow got the canisters of baking ‘soda’ and baking ‘powder’ confused!

They were still edible, just very salty tasting. Mrs. Voyles was very kind about it, despite the fact that I literally messed up biscuits for fifty people! I can laugh about this now, but I was very disappointed in the moment!

Moral of the story- pay very close attention to your powder and soda. When you do, biscuits turn out much better!

Recipe for Southern Style Biscuits

  • 4 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 sticks butter
  • 1 1/2-1 3/4 cup milk (or buttermilk)

Makes approximately 20 medium size biscuits.

How to Make Southern Style Biscuits

1. Mix flour, baking powder, baking soda, and salt together.

2. Cut butter into sixteen, tablespoon slices. Add butter to dry ingredients. Using your hands, mix the butter in with the flour mixture. Your goal is to get flakey pieces of dough. Use your fingers to gently break up the bigger clumps.

3. Add one cup of milk. Mix together using your hands. Then add additional 1/2 cup of milk. If dough is still too dry, add another 1/4 cup of milk. The goal is to get a somewhat sticky, bulky dough. (See picture below for dough texture.)

4. Pre-heat oven to 400 degrees.

5. Flour surface and your hands.

6. Gently place the dough on the floured surface. Mash flat with hands until dough is about 1/4 inch thick. You may need to sprinkle a little flour on top of the dough to keep from sticking to your hands.

6. Cut out biscuits using a biscuit cutter or glass mason jar. (I use a jelly jar.) Once you have cut out all the biscuits you can, re-gather remaining dough and follow step 6 until all the dough is used.

7. Lightly spray a cookie sheet or cast iron skillet with cooking spray or coat with a thin layer of oil.

8. Bake for 15-20 minutes or until golden brown.

Tips and Tricks for Better Biscuits

1. It is easier to cut and add in the butter while it is cold, not room temperature.

2. The key to fluffy, soft biscuits is to not overwork the dough. This simply means when mixing dry and wet ingredients you want to work with the dough as little as possible. The dough does not have to be smooth, you actually want a somewhat rough, clumpy texture. When rolling and cutting out the biscuits try to make as little contact with the dough as possible.

3. You can freeze biscuit dough if you only need a certain amount and use the rest when needed.

Making Dinner From Scratch

I came up with this recipe as I was making super one night a few weeks ago…sometimes that turns out great, other times no so much! If you have followed the blog posts from the beginning you know that I am trying to move away from as much processed food as possible for health and financial reasons. Creamy Spinach Chicken Sauce Making Techniques

For this sauce, and other cream sauces, you can follow this basic technique to get a quality sauce every time! Once you have become familiar with it you can whip up any kind of cream sauce using these simple steps. This technique is perfect for homemade cream of chicken, cream of mushroom, etc.

Step One: Begin with a hot skillet and melt desired amount of butter on low heat.

Step Two: Once butter has fully melted, add flour. Whisk flour and butter together to create a thick gummy substance. Be careful not to leave flour and butter unattended at this time or it will scorch.

Step Three: Add broth (or specific liquid mentioned in the recipe you are following) slowly, mixing in between to fully dissolve flour/butter mixture. Turn the heat up to medium and stir intermittently with a whisk until the sauce has thickened.

After you have followed these basic steps you can begin to add seasonings and additional ingredients to make whatever sauce you need!

Extra Tip: If you want a thicker sauce, start with less broth. If you want a thinner (runnier) sauce, use more broth.

Serve Creamy Spinach Chicken with a loaf of Cheddar Sourdough Pull-apart Bread (get the recipe here!).

Recipe for Creamy Spinach Chicken

Ingredients

  • 2lbs. thawed chicken breasts
  • 3-4 handfuls spinach
  • 4 tbsp. butter
  • 2 tbsp. flour
  • 2 cloves garlic
  • 1 1/2 cup chicken broth
  • 3 heaping tbsp. sour cream
  • 1 cup shredded pepper jack cheese
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. onion powder
  • Optional- 1 tsp. cayenne pepper
  • 1 tsp. paprika

Instructions for How to Make Creamy Spinach Chicken

1. Mince garlic and shred cheese.

2. Place chicken in a large skillet and cook on low-medium heat. Season as desired. TIP: Cover with lid while cooking for tender chicken.

3. In another skillet, on low heat, cook spinach and garlic until spinach has wilted down and garlic is aromatic, about 4-5 minutes.

4. Shove the spinach and garlic to one side of the skillet and melt butter on the other side. You can totally remove the spinach until later if that is easier for you.

5. Once butter has completely melted, whisk in flour. Be careful to stir constantly until well incorporated.

6. Add chicken broth slowly until the flour mixture has fully dissolved. TIP: If your chicken is done cooking, add the chicken juice to the broth mixture as well. This gives amazing flavor and zero waste on the chicken!

7. Turn heat up to medium and allow the broth to simmer. Stir with whisk intermittently until sauce thickens.

8. Add sour cream and cheese. Stir until everything has melted.

9. Add salt, pepper, onion powder, paprika, and cayenne pepper.

10. Add cream sauce to chicken and allow to sit for 10-15 minutes.

Served best over rice and mashed potatoes.

Dessert #1: Cherry Pie Casserole

This dessert is so easy to make! I know I recently posted a recipe and said that I try to make everything from scratch here. Well…I sort of cheated this time! You could easily turn this into a from scratch recipe but I had all the ingredients to make this in less time with less effort so I went for it.

Here’s what you need:

  • 2 cans of crescent roll dough (pie dough would work as well)
  • 21 ounce can of cherry pie filling
  • 8 ounce block of softened cream cheese
  • 1 cup of sugar

Instructions

1. Pre-heat oven to 350 degrees and grease a 9×13 casserole dish.

2. In a bowl or stand mixer, combine pie filling, cream cheese, and sugar. Mix together until creamy and well incorporated.

3. In a greased 9×13 pan press one can of crescent roll or pie dough in the bottom and sides. If you are using crescent dough you will need to pinch the creases together first.

4. Add the fruit mixture to the pan.

5. Top with the second can of dough. OPTIONAL: Sprinkle the top with extra sugar.

6. Bake for 25-30 minutes or until the top is golden brown.

Best served warm with vanilla bean ice cream!

Dessert #2: Fruit Cookie Dessert

This from-scratch dessert is another easy way to enjoy the taste of summer! I love baking seasonally because I feel like it helps me slow down and fully enjoy the moments I am in. This one is a top favorite! (Confession- I literally ate half of it by myself, over a few days of course!)

Ingredients for Cookie

  • 1 1/4 cup sugar
  • 1/2 cup softened butter
  • 1/4 cup liquid or melted coconut oil (or any other kind of oil)
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 1/2 cups flour

Ingredients for Frosting and Topping

  • 8 oz. cream cheese
  • 1/4 cup milk
  • 2 1/2 – 3 cups powdered sugar
  • Topping: fruit of your choice

Instructions

1. Preheat oven to 350 degrees and grease an 11×16 sheet pan (aka. jelly roll baking sheet)

2. In a bowl or stand mixer combine sugar, butter, and oil. Mix together until creamy.

3. Add eggs, vanilla, salt, and baking powder mixing together one at a time.

4. Add flour 1/2 a cup at a time. Dough should not be sticky at all. If it is, you may need to add more flour.

5. Press dough into sheet pan and bake for 10-12 minutes.

6. While the cookie dough is baking, combine softened cream cheese, milk, and powdered sugar to a large bowl or stand mixer. Mix together until creamy then place in the refrigerator until needed. If frosting is too runny add more powdered sugar.

7. Wash and cut desired fruit.

8. Allow the cookie to cool to room temperature.

9. After the cookie has cooled, remove frosting from the refrigerator and spread on top. Add desired toppings.

One very easy bread product to begin making on your own are these homemade tortillas. (Not to mention they are so fun to make!) They can be used for taco shells or you can stretch them to burrito size depending on what you are using them for.

While you’re at it, make your own taco seasoning!

Step by Step Instructions for Homemade Tortillas

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 1/2 tsp baking powder
  • 3/4 cup hot water

Instructions

  1. Prepare your skillet by heating a thin coat of oil on low-medium heat.

2. Mix all the ingredients together. You may need to use your hands. Add more flour if necessary. You want a soft, pliable texture but not sticky.

3. Knead dough on a floured surface for 2-3 minutes or until dough is pliable. Mold dough into a round ball and cut into 8 equally sized triangles (or as equally as you can). If making for tacos, for a thinner tortilla cut into 10 triangles.

4. Roll each triangle into a ball.

5. On a floured surface begin shaping each ball into a tortilla with a rolling pin. I like to flatten the ball with my hand first. You can make them as thick or thin as you prefer. Stretch them extra big for burritos.

6. Gently place the tortilla in the hot skillet. Cook for about two minutes per side or until brown spots have formed.

7. Once done, place on a plate. (Optional: put paper towel underneath to absorb any excess oil.)

8. Repeat this process with the remaining tortillas.

Tips and Notes for Success

*I have only ever made these using a cast iron skillet. You may need to adjust heat to medium instead of low-medium if you are using a non-cast iron method. You could also make these on a griddle two or three at a time for quicker results!

*If you find that the dough wants to stick to your countertop or rolling pin even after the surfaces have been floured, sprinkle some extra flour directly on the tortilla until sticking stops.

*You may need to reapply another thin coating of oil halfway through. Make sure you do not over oil or your tortillas will be very greasy (learned this from experience!).

Homemade Flour Tortillas

Quick and easy homemade flour tortilla recipe for soft and fluffy tortillas you can make in a flash!

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp salt
  • ½ tsp baking powder
  • ¾ cup warm water
  • 1 tsp butter or oil

Instructions
 

  • Mix flour, salt, and baking powder in a medium sized bowl.
  • Add warm water. You should get a thick, pliable dough that looks similar to a thick biscuit dough.
  • Roll the dough into a ball then divide into 10 equal sections (8 sections for larger tortillas). Roll the dough out thinly on a well floured surface. You may find it easier to pick up the dough with a flat metal spatula since the thin dough will break easily on transfer.
  • Preheat cast iron skillet or griddle to medium heat. Melt butter on skillet top then place tortilla dough on hot surface. Allow to cook for about 1-2 minutes. Flip the tortilla and cook an additional 1-2 minutes. Remove from heat.
  • Repeat the process until all the tortillas have been cooked. Wrap the tortillas in towel as you cook them to keep them warm.

Homemade Mattress Refresher and How to Clean Your Mattress

Learn all about how to make your own homemade mattress refresher! As life happens mattresses get dirty. How often do you think about this? If you are like me, probably seldom, if ever. Occasionally I would remake the bed and think, “This mattress has a lot of dust in the cracks!”. Do you know what I did about it? Absolutely nothing. I covered it back up with fresh sheets, then went about my day forgetting the dust and dirt even existed.

After de-sheeting the bed a few weeks ago, I decided it was finally time to do something about all that nasty dust and grime. Maybe it is because I was second trimester pregnant and needed to freshen my nest, but I truly believe I have found a solution that not only will leave your mattress less crusty but also smelling great!

How to Make Mattress Refresher

What you need:

  1. Baking soda
  2. Your favorite essential oil.

I used orange oil because it is summer and I thought it would be a nice, seasonally appropriate scent. I also chose to store my mattress refresher in a small jelly jar because it matches the storage for all my other homemade cleaning supplies. However, you could easily store it in a plastic bag or Tupperware container.

How to Make:

Measure out 3/4 a cup of baking soda and place in desired storage.

Add 25-30 drops of desired essential oil.

Stir in and let sit about 10 minutes. This gives the soda time to soak up the scent of the oil. (Note: I stirred mine with a fork to allow powder to stay loose and easier to manage.)

How to Refresh your Mattress

While you are waiting on the soaking refresher, strip your bed of all blankets, pillows, and sheets. I take this time to go ahead and wash those items and replace with fresh, clean ones. This will leave everything smelling wonderful!

Once the refresher has sat for about ten minutes sprinkle it liberally all over your mattress.

Allow the refresher to rest on the mattress for thirty minutes to an hour. (Leaving it longer will not do any harm.) Make sure if you have littles that they do not get on or near the bed at this time.

When you are ready, get your vacuum out and vacuum the powder up with the hose attachment. As you vacuum the powder you will also be getting rid of all that dust and grime while leaving behind a clean smelling mattress.

You can refresh your mattresses and carpets as often as you would like. I recommend trying to do it every three to four months.
