- 2 lbs. thawed chicken breasts
- 3-4 handfuls spinach
- 4 tbsp. butter
- 2 tbsp. flour
- 2 cloves garlic
- 1 1/2 cup chicken broth
- 3 heaping tbsp. sour cream
- 1 cup shredded pepper jack cheese
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. onion powder
- Optional- 1 tsp. cayenne pepper
- 1 tsp. paprika
Mince garlic and shred cheese.
Place chicken in a large skillet and cook on low-medium heat. Season as desired. TIP: Cover with lid while cooking for tender chicken.
In another skillet, on low heat, cook spinach and garlic until spinach has wilted down and garlic is aromatic, about 4-5 minutes.
Shove the spinach and garlic to one side of the skillet and melt butter on the other side. You can totally remove the spinach until later if that is easier for you.
Once butter has completely melted, whisk in flour. Be careful to stir constantly until well incorporated. Add chicken broth slowly until the flour mixture has fully dissolved. TIP: If your chicken is done cooking, add the chicken juice to the broth mixture as well. This gives amazing flavor and zero waste on the chicken!
Turn heat up to medium and allow the broth to simmer. Stir with whisk intermittently until sauce thickens. Add sour cream and cheese. Stir until everything has melted.
Add salt, pepper, onion powder, paprika, and cayenne pepper. Add cream sauce to chicken and allow to sit for 10-15 minutes.
