Quick & Easy Dinner
As a busy mom of three under four who cooks from scratch dinners just about every night it is recipes like this one that keep my meal routines flowing with ease. This beef and broccoli is just that!
Beef and broccoli can be easily made in just about 20 minutes (yes- even with kids under your feet!). We serve ours over rice because this is quickest and helps things stretch a bit further. However, you can also serve it over mashed or roasted potatoes, or even Asian pasta.
One of my favorite things about this meal is that it is very hands off. The rice just has to be started, then can be left to help the toddler, or entertain the baby! The beef is a little more hands on but can be cooked on lower heat if you need to bounce between tasks.

Beef and Broccoli: a Nutritional Meal
As if there aren’t enough reasons to love beef and broccoli, it is also a very nutritional meal! Rice is a great, healthy source of carbohydrates. Broccoli is rich in fiber, as well as protein. Beef is an excellent source of protein as well!
You can also add in extra vegetables. This recipe calls for mushrooms and broccoli, however, you can add diced peppers, onions, or anything you prefer in a stir fry type meal.
To “hide” the vegetables from picky eaters, you can chop them up very small or with a food processor. Cook the vegetables down before adding the beef. This helps even out the texture and flavor of the vegetables.

- 1lb ground beef
- 12 ounces frozen broccoli, or two heads of fresh broccoli
- 1 cup sliced mushrooms
- 1/2 cup teriyaki sauce
- 2 tbsp coconut aminos (or soy sauce)
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp paprika
- Rice (make as many servings as your household requires)

How to Make Beef and Broccoli
As previously mentioned, beef and broccoli is one of my favorites because it is quick and easy. It also fits into the flow of a busy kitchen. Here’s how to make it…
- Begin by cooking your rice. The amount of rice will depend on the amount of servings your household requires.
- After the rice begins to boil, lower the heat, and place the lid on the pot.
- As the rice cooks, begin browning the ground beef on medium heat. When the beef is half cooked, add the salt, pepper, and paprika. After it has browned completely, add coconut aminos and teriyaki sauce.
- Steam broccoli over the stovetop or in the microwave (if using frozen broccoli).
- Add broccoli and mushrooms to the ground beef and allow to simmer for 5-10 minutes, stirring regularly.
- Serve beef and broccoli over rice.
