Making Desserts with Sourdough Starter
Making desserts with sourdough starter is a way to elevate the flavor of any recipe! It also has a way of making the texture of desserts fluffier and less dry. Sourdough desserts also make you feel like they are healthier- and I’m not here to argue about that!
Adding sourdough starter to any bread or dessert recipe that calls for yeast is extremely easy. In my kitchen, we simply substitute the yeast for about 1/4-1/2 cup sourdough starter, depending on the amount of yeast the recipe calls for. If the recipe calls for rise time, it may need a longer amount of time when using sourdough starter.
Are sourdough desserts actually healthier?
That leaves the question, are sourdough desserts actually healthier? Depending on the recipe we can definitely assume yes! (That is what I choose to believe, anyways!).
There are a few reasons that some sourdough desserts are healthier…
Lower Sugar. Because yeast requires sugar to activate, often sourdough recipes are lower in the amount of sugar used. Also, many recipes that use sourdough starter call for sources of natural sugar like honey, cane sugar, or maple syrup. If this is the case, then the sourdough dessert recipes are healthier!
Fermentation. Along with less sugar or better sources, most sourdough dessert recipes also call for a fermentation step. There are several benefits of long fermenting such as, breaking down the gluten and producing beneficial bacteria. This bacteria may all be destroyed in the baking process, however, it does appear to provide more benefits that “regular” dessert recipes.

Fermenting Sourdough Dessert Recipes
As mentioned before, one of the benefits of sourdough dessert recipes is fermentation. Fermenting recipes made with sourdough starter gives a much more robust flavor and a rich, fluffy texture to any dessert.
Most of the recipes in this post do not require the fermentation step, meaning they can be made quicker. They also achieve similar results without the need for further fermenting.
If you are making your desserts using starter because you are gluten intolerant, be sure to ferment all your sourdough dessert recipes for at least 8 hours. This step is crucial for breaking down the gluten in your recipes.
To add the fermentation step to these recipes, and others follow these steps…
- After mixing your dough or batter, allow to sit on the countertop for at 4-6 hours or in the refrigerator for 8-12 hours. Cover with a damp tea towel to keep the contents from drying out.
- Continue with the recipe as stated in the instructions.
