One of the main ingredients in this chicken cordon bleu casserole is the breadcrumbs. They are not required for this delicious meal but they definitely elevate it! However, if you are like me you probably do not keep breadcrumbs on hand. At least- I used to never have them!
These days I always have from scratch breadcrumbs in the pantry. This quick, ten minute recipe is an easy way to use up bread ends and stale bread. You can use sourdough, white, wheat- whatever you have on hand! The best part- it only takes about ten minutes.

- 2-3 chicken breasts
- 6-7 slices deli ham
- 4-5 slices Swiss cheese (or whatever cheese you have on hand)
- 2 tsp Italian chicken seasoning
- 3 tsp dijon mustard
- 1/4 cup mayonnaise
- 1 cup milk
- 1 tsp black pepper
- 1 cup Italian breadcrumbs

How to Make Chicken Cordon Bleu Casserole
If you have heard of or made chicken cordon bleu, you know it is delicious but the process of making it is somewhat complex. To make classic chicken cordon bleu, you roll ham and cheese into a piece of chicken breast, carefully dip it into an egg mixture, then dip the stuffed breast into Italian breadcrumbs. Top it with creamy dijon sauce and you have chicken cordon bleu!
This recipe carries all of those classic flavors, however it streamlines the process!
The casserole version is made by simply slicing the chicken into strips and layering in slices of ham and cheese in between. It is then seasoned and covered in the creamy dijon sauce. Top it with breadcrumbs, bake, and you are done!

Chicken Cordon Bleu Casserole
Ingredients
- 2-3 chicken breasts
- 6-7 slices deli ham
- 4-5 slices Swiss cheese or whatever cheese you have on hand
- 2 tsp Italian chicken seasoning
- 3 tsp dijon mustard
- 1/4 cup mayonnaise
- 1 cup milk
- 1 tsp black pepper
- 1 cup Italian breadcrumbs
Instructions
- Slice chicken breast into small, thin strips then place in the bottom of the casserole dish.
- Shred ham slices into thirds and cheese into halves. In between the chicken breasts, randomly layer in shreds of ham slices and slices of cheese.
- Add in chicken seasoning over meat and cheese mixture.
- Make the creamy dijon sauce by combining dijon, milk, mayo, and black pepper (I prefer to use an emulsion blender but you can also stir by hand). Pour the sauce over top of the meat and cheese, moving portions so it will coat in between the chicken and deli slices.
- Bake for 10 minutes at 350℉. Remove from oven then add breadcrumbs to the top. Bake an additional 10-15 minutes or until chicken is 160℉ internal temp.
