Homemade Elderberry Popsicles: Your New Favorite Summer Treat!

Who knew making your own popsicles at home could be so easy and enjoyable? Not to mention immune boosting and hydrating!

If your family is anything like ours and you are going through popsicles like crazy. As we experience record breaking, HOT summer days here in East Tennessee we are grabbing for anything we can to cool down as we continue to live life outdoors. Then there is the fact that I have three toddlers and they just love popsicles regardless of the temperature outside!

Since we are going through them non-stop I figured, why not make my own? And if I am going to make my own, why not make them the ultimate healthy popsicle? So here’s to a summer packed full of immune boosting ingredients that I can trust because they came from my own kitchen!

The Ultimate Clean Ingredient Popsicle Recipe

One reason I absolutely LOVE these elderberry popsicles is because they have it all- 100% natural ingredients, natural sugar (optional, you can make them completely sugar free), hydration boosting and immune support! All that and they are very cost effective as well.

Throughout the late spring/early summer I found myself buying the same popsicles I do every summer. A great brand that offers 100% juice popsicles- no dyes, no added sugar, no junk! (I would still highly recommend that brand and do keep a stash for when I run out of homemade pops.) The problem- this summer I have three popsicle eating machines!

As summer heated up even more, I decided maybe the most budget friendly popsicles would be the homemade kind, especially if I wanted to prioritize clean ingredients.

Sourcing Clean Ingredients for Homemade Elderberry Popsicles

Sourcing truly clean ingredients for your homemade elderberry popsicles is easy and you can be as particular as you desire to be. Basically, it comes down to two main ingredients…

Elderberry. Sourcing a trustworthy elderberry packet for your popsicles is a great place to start! Here in our kitchen, we use the immune boosting elderberry kit from Earthley Wellness. They offer a kit packed with immune boosting herbs and organic elderberries. The DIY elderberry kit offers you the option to add a sweetener to your popsicles, like honey or maple syrup, or to leave off the extra sugar. Juice. Since these popsicles are mostly made of juice, it is important to find, or make, a product you can trust! I prefer a 100% juice product with no added sugars, dyes, preservatives, etc. Of course, the only way to get the best quality is to make your own! However, there are plenty of great products that are easy to find in most local grocery stores. Brands like Bolthouse, Santa Cruz, and Lakewood are some of our favorites!

My Favorite Way to Make Homemade Popsicles

As for popsicle molds and methods, the options are endless! You can purchase molds in just about any shape, size, and material- plastic, silicone, etc. Here are a few of my options….

•Traditional Molds. You can easily find traditional silicone popsicle molds that are affordable and easy to use! I like these for older kids and adults best because they look pretty and give a nice amount. Check these ones out here!

•Silicone Tubes. These silicone tube molds are the perfect amount for young toddlers ages 1-2. They don’t spill as easily as a plastic tube and they hold a bit less— nevertheless, the perfect amount for this age group! They are also reusable and dishwasher safe. Get them here on Amazon!

•Plastic Tubes. These are my number one go to this summer because they are easy and affordable! We go through popsicles so quickly with three small kids and these are perfect for big batches. While not as sustainable, they are the easiest for bigger families! Get a bunch here on Amazon! (The ones linked also come with a funnel for mess free filling.)

Ingredients for Homemade Elderberry Popsicles

The ingredients for these elderberry popsicles are so easy to source. Check out what you need here….

  • Elderberry syrup kit
  • 1/2 cup honey or maple syrup
  • 64 oz fruit juice
  • Popsicle mold of choice (see recommendations above)
  • Small silicone funnel
  • Medicine dropper or syringe (for correct dosing)

How to Make Homemade Popsicles

  1. Begin by making your elderberry kit following the instructions on the packet. Be sure to sweeten your syrup with the honey or maple syrup while it is still hot as this ensures it will dissolve well.
  2. Pour fruit juice into molds (for silicone or plastic tubes I like to go one at a time adding juice, then syrup). Be sure to leave enough space for the syrup.
  3. With your syringe or medicine dropper, measure out the correct dosage for each popsicle and add to the fruit juice. Note: dosage should be on your elderberry packet and may vary by age. I do 5ml per popsicle for my kids ages 1-4. During sickness you can give a higher dosage of elderberry syrup so they can eat two or three spaced out throughout the day.
  4. Seal your molds and refrigerate at least 8-10 hours or until frozen solid.

Elderberry Popsicles for Sickness: Not Just a Summer Treat!

As mentioned, these popsicles are also great for sickness, as well as a summer treat! They are a great way to keep children hydrated during the flu, HFMD, stomach bugs, and colds. Here are a few tips if you are using these during sickness…

  • Elderberry dosage can be increased during sickness so more than one popsicle a day is fine. However, too much elderberry may cause upset stomach and diarrhea so monitor children to make sure they are not getting too much. (I allow 2-3 per day at 5ml elderberry/popsicle and my children experience no issues.)
  • Add electrolytes. Adding an electrolyte mix to your juice or substituting altogether is a great way to add hydration as well as immune support during sickness!
  • Add to breast milk. If you have an older infant or toddler of breastfeeding age you can add a small dose of elderberry to breast milk and freeze it instead of using juice. *Be sure to follow age specific regulations for your elderberry packet! It is not recommended for children under one to consume honey products of any kind due to botulism. DO NOT SWEETEN WITH HONEY FOR ELDERBERRY SYRUP INTENDED FOR USE FOR CHILDREN UNDER ONE YEAR OF AGE!
