How to Make Easy Breakfast a Success Every Time

Making breakfast from scratch became a goal as my children started to eat solids. I also noticed my need as a pregnant mom for a protein packed, easy breakfast on the daily. However, as a busy mom of three young children, I also realized that making a homemade breakfast every morning could often be a challenge. Here is how I make breakfast work in our home….

  • Make a double batch. This has probably helped me the most in my daily breakfast making endeavors. Making a double, or even triple batch of one meal (especially breakfast) takes the pressure off. You are cooking for it to last two or three days worth of breakfasts.
  • Plan ahead. I am by no means a meal planner. However, planning out my breakfasts for the week ahead really does help me stay on track!
  • Make variations of the same few recipes. Choose three basic recipes, like the ones below, then make different variations of them for weeks and weeks. Use ham instead of bacon, different cheeses and veggies, or swap out toppings, etc. This keeps the same routine for you, yet a different taste every time!

Keeping a Pantry Stocked for Easy Breakfast

Keeping your pantry stocked with everything you need to make a quick and easy breakfast is another key to success! I often find that I do not make breakfast when I do not have all the essentials on hand. Things like oats, pan spray, flour, chocolate chips, protein powder, etc. all help me stay on track!

Overnight oats are a family favorite around here! I love the texture of baked oatmeal far more than stovetop or microwave quick oats. For a quick breakfast, they do take about 30 minutes to bake. The Importance of a High Protein Diet for Moms

Eating a high protein diet has significant benefits for most adults, but especially mothers! The research on this is astounding. Benefits include mood improvement, hormone balance, increased energy, and many more. This is especially true for pregnant and breastfeeding mothers. Adding a bit of extra protein to your diet can be a complete game changer!

During my first trimester, I found it overwhelming to try and get all of the suggested nutrients into my diet. So all I focused on was good quality protein. I understand this isn’t ideal, but for me, it was a strategy that worked and made me feel better, too.

The average American eats well below the recommended amount of 60 grams of protein per day. Research shows that women striving for around 80-100 grams per day see the best results in their daily health and mental wellness. If you are eating a high protein diet with junk ingredients like artificial sweeteners, corn syrup, etc. then you will greatly impact the full benefits of a high protein diet. Homemade is always best! If you do buy convenience, pre-packaged protein options look out for sweeteners, dyes, syrups, and other sketchy ingredients.

From Scratch Breakfast Ideas

1. Eggs + Cheese + Bread

This is my daily go to as a pregnant mom of two toddlers. If nothing else I can always whip up some form of eggs, cheese, and bread- whatever I have on hand! This may sound over simplified but I often wake up needing to eat something ASAP and this simple from scratch breakfast just keeps my day flowing. Pair it with some avocado or other on hand veggies/fruit and you have a perfectly well balanced, nutritious meal to start your day.

Let’s break it down: There are about 6 grams of protein in one egg and around 7 in one slice of cheese. My extra protein tip is to make the eggs scrambled and add whole milk (has about 7g protein per cup) or drink a glass of whole milk with your meal. Say I eat about 3 scrambled eggs, and one slice of cheese on a piece of sourdough toast– estimated protein amount for this very simple meal equals about 30 grams (not including a glass of milk or milk in the eggs)!

2. Egg Bake

This is another version of my egg + cheese + bread hack. Simply gather any meat like bacon, sausage, etc. As well as whatever cheese you have on hand and about a dozen eggs (perfect summer time breakfast if you have your own chickens- iykyk!). Cook your meat. Pour the eggs (well beaten) into a casserole dish. Then add veggies and top with cheese. Bake for about 25-30 minutes at 350 degrees F. Don’t forget your sourdough toast!

Tip: if you are breastfeeding make this recipe then eat it in a tortilla wrap so you can eat one handed, mess free!

3. Yogurt + Granola + Fruit

This is another quick and simple favorite! Use any form of high protein (lower sugar) yogurt, granola (extra points if it has extra protein!), and fruit you have on hand. While it is not very breastfeeding friendly, it is a great way to get that extra protein first thing.

4. Breakfast Burritos

My favorite go-to for breastfeeding breakfast! Stuff eggs, meat, cheese, veggies- whatever you have accessible, into a burrito wrap, or two! and eat one handed, mess free while you feed your baby.

5. Oatmeal Bake with High Protein Oats

Oatmeal bakes are another versatile way to get that protein first thing! Regular oats only have about 6 grams of protein per cup. However, you can purchase high quality extra protein oats that will give you anywhere from 10-15 grams per serving. Combine that with other ingredients like eggs, milk, nuts, etc. and you have a delicious, protein packed breakfast. Try making our baked oatmeal recipe here!

Easy High Protein Meals for Lunch and Dinner

There are plenty of ways to get that extra protein in your lunches and dinners. Here are a few of my favorite meals to eat throughout the week…

1. Chicken Salad Sandwiches

Make this simple chicken salad sandwich for a midday protein boost. It’s easy to prep ahead and have ready in the fridge on the go!

2. Deli Meat and Cheese

Another protein filled hack that sounds too simple to be true! Three slices of turkey equals about 14g protein. Add a slice of cheese for around 7g and eat it on sourdough bread. This meal would equal about 25g of protein. Boost it up by eating a high protein snack on the side!

3. High Protein Salad

Getting those extra veggies in doesn’t mean you have to skimp on the protein! Add in some high protein cheeses like parmesan or ricotta served with a half or whole grilled chicken breast. Don’t forget the bacon!

4. Taco Bowls

These taco bowls are a delicious way to get extra protein! Again, it sounds too simple but if you make meat the star of your bowl you can really pack in some protein. Mix in some veggies. Top it with cheese and you have an easy high protein lunch or dinner!

5. Grilled Chicken Breast or Steak served with a Baked Potato

This simple, meat and taters kind of meal also packs in the protein! Making the meat the main star of the meal with extra added protein in your loaded baked potato.

6. Soups- Cooked in Bone Broth

Did you know that homemade bone broth can have between 10-20 grams of protein per cup? Pair this with added meat in your soup, cheeses, milk, etc. and you can turn any soup into a simple, high protein meal! Learn all about how to make your own homemade bone broth in this post here.

Protein Packed Snacks

1. Sausage Balls

Get the recipe for protein packed cream cheese sausage balls here! These never dry sausage balls are the perfect make ahead recipe for a week of quick, on the go snack or even breakfast.

2. Homemade Protein Bars

Homemade protein bars are the way to go! The most trusted ingredients are the ones you add yourself. Learn all about how to make them over on this post!

3. Greek Yogurt Bowls

An easy, no fuss favorite for quick protein! All you need is some greek yogurt, granola, chocolate chips, or whatever other toppings sound good.

4. Protein Bites

This quick, make ahead snack is perfect for breastfeeding mamas. Zero mess, one handed perfection! You can find all sorts of recipes by searching “protein bites” on Pinterest. Most recipes are a simple oatmeal and peanut butter (or other nut butter) base with added seeds, chocolate, etc.

5. Perfect Bars
Don’t have time or energy to make your own protein bars? These make a great snack with around 15g of protein per bar, and they have ingredients that I can trust. Click here to check them out! Another bonus is that they’re “perfect” (pun intended) for on the go and very filling. Before pregnancy, I paired them with a grass fed beef stick for a huge protein boost in the middle of the afternoon. While struggling with morning (or all day) sickness, I find meat sticks to be a struggle, so I don’t include those during that time.

Protein Drinks

Find a high-quality protein powder that you can make a filling protein shake with. Make them plain as directed or find some recipes that can pack in extra nutrients with seeds and other nutrient dense options.

You’ll want to be careful of added and fake sugars in your protein powders, so be sure to read your labels.

I found in my first trimester that if I could have a protein shake first thing in the morning, it helped me not be as sick throughout the day usually.

These seven easy from scratch dinner ideas are perfect for your weekly meal plan! As a busy mom of two littles I love prioritizing our health through nourishing, delicious meals. However, I rarely have hours to devote to this one task! That is why I am all about simple meals I can make from scratch in under an hour. My Meal Planning Strategy

Let’s just say- it is not a strategy at all. I honestly hate meal planning. I always end up wanting something besides the meal I planned for the day! When it comes to meal planning I would much rather wing it. However, I do notice that when I go about it without some sort of plan I end up over-spending on the grocery budget. I had to figure out a way to get the best of both worlds so we could eat well while also being kind to the budget!

Necessity is the mother of invention! So I came up with a “strategy” that provides us a very loose plan and I build my grocery list off of that. Here is how it works.

I plan what meals sound good for the week choosing about ten that sound best. Taking the meals I chose I will then build a grocery list off my ideas. Sometimes it is easy to come up with ten, other times I just come up with as many as I can (seven minimum) then add things to my grocery list for easy, generic things like chicken breast, ground beef, pasta, etc.

Another great way to come up with the ten meals is to shop your refrigerator or pantry. What do you have? What meals could you build off what is available? Think of it as one of those cooking game shows where you are given several random ingredients to use and you have to come up with a meal from it. This also limits food waste!

Cooking Dinner From Scratch Every Week

We currently eat most of our meals at home (minus a few times eating out for lunch or dinner per month). This means a lot of cooking from scratch! If you are not used to this it may seem like a lot of work but the benefits are well worth it! 10 Easy From Scratch Dinner Ideas You Can Make in Under an Hour

1. 30 Minute Stromboli Pizza

This delicious stromboli pizza is a great way to do a simple, from scratch pizza night! You can make a simple dough using sourdough starter or yeast (our post has instructions for both methods!). Use any combination of mix ins you prefer- pepperonis, cheese, turkey, sausage, and veggies then add a bit of pizza sauce for dipping. This recipe takes just 30 minutes from start to finish and makes two strombolis that feed eight people. Get our recipe here!

2. One Pot Chicken Vegetable and Rice Soup

This simple, quick recipe for chicken vegetable and rice soup is a one pot (busy mom) favorite! Nourishing chicken broth, whatever vegetables your family prefers, and rice all cook in one pot in under 45 minutes. A classic spin off the of a classic chicken pot pie but easier! This recipe uses biscuits on top instead of the traditional pie crust. 4. Our Favorite From Scratch (ish) Pasta

For a quick, easy and delicious pasta I use boxed noodles and canned sauce. Does that make this a truly from scratch meal? Here’s how we make this quick and easy pasta…

  • 1lb ground beef or chicken breast

Cook the meat and pasta fully. Add pasta, meat, pasta sauces and alfredo to a 9×13 casserole dish. Top with shredded mozzarella. bake for 15-20 minutes or until cheese has melted. We love serving with easy sourdough discard breadsticks when I have the time.

5. Creamy Spinach Chicken

6. Taco Night Featuring From Scratch Tortillas

We weekly have some form of taco night whether it is chicken or beef tacos, burritos, quesadillas, etc. Regardless of what we make I love adding fresh made tortillas to the menu using this recipe! These tortillas can be made with a tortilla press or rolled out thinly to make in a skillet. They are easy to make and require no rise time! Make eight tortillas in just 12 minutes!

7. Hamburgers with From Scratch Honey Hamburger Buns

Who doesn’t love a good hamburger? Serve them with a from scratch hamburger buns and they become irresistible! Our recipe uses sourdough starter for a delicious, soft honey hamburger bun. However, the recipe can be adapted for yeast users as well using 2 tsp active yeast and one cup of warm water instead of sourdough starter.

Learn how to make the most out of your meat budget in this post! During this season of economic decline we all want to feed our families well. This can be hard to accomplish without feeling the sting of over priced goods every time we purchase groceries! Meat prices have especially taken a toll these days causing our budgets to bend over a small package of chicken.

Maybe I am the only one who feels this way, but as a stay at home wife I absolutely hate the feeling that I am spending all the money my husband has worked so hard for! I know we have to eat, we have to buy groceries, there is not another economy to buy them in. However I do desire to be wise in this area.

I am no expert by any means! I decided I would throw together a list of a few things that I have been doing to help us save a few dollars and share them here. No matter if you are a homemaker or a career gal I think we can all benefit from these tips! Tips on How to Get the Most out of Your Meat Budget

1. Wait for deals on bulk supply.

By bulk supply, I mean large portions of meat. A few good options to look out for are pork butt, brisket, whole chicken, and larger selections of roast. There are a few things that need to be considered beforehand such as- do you have enough freezer space to store it? How should the meat be cooked (does it require a grill, smoker, etc.) and what will you do with it after you have cooked it?

2. Do not make meat the main subject of every meal.

This is a hard one if you are a meat eater! However, try to be more intentional to not make meat the main event. I have three words- beans, rice, taters! These three simple (and inexpensive) ingredients will help you stretch your meats beyond twice the servings. Breads and pastas are also another good way to get more out of your meats. You want to think of heavier foods that will fill you up quicker but at the same time compliment the meats well.

3. Save time and money on your meat budget.

Honestly these days my time is almost as valuable as my money. Because of this I do not just want to focus all my time on saving a few dollars. I find that making large portions of meat all at once, then freezing the cooked meat is the best way for me to get the most out of my time and money. Purchasing meats I can cook overnight essentially allows me to work in my sleep! Cooking meals in the crockpot during the day not only gives me bigger meals but also allows me to save time.

4. A zero waste mentality.

A zero waste mentality may also help you make the most out of your meat purchases. Instead of thinking, “What meal can I make with this?” think, “How many uses are there for this meat?” A good example is this- if you are buying a whole chicken you can get two meals out of it by shredding it up and adding it to rice or a soup. Cooking Ideas that Will Help You Stretch Your Meat

  1. Pork Butt. Cooking a whole 8-10lb. pork butt in the oven or smoker will make you approximately four meals for four people (two meals for eight people). It is not at all time consuming and can be cooked overnight. All it requires is to be shredded, portioned, and frozen.
  2. Whole Chicken. Make a whole chicken in the oven or crockpot. You can shred the chicken and add it to soup, chicken and rice, tacos, etc. The bones and fat can be used to make chicken broth that can be canned and used for later meals. The amount of meals you will get from a whole chicken depends on what you plan to make with it.
  3. Chicken Breasts. Make chicken breasts stretch further by serving with rice. You can season the rice in any way you desire to make the meal more Oriental, Hispanic, Cajun, etc.
  4. Ground Beef. Add onions to ground beef to use less meat. This is perfect for tacos and spaghetti! If your children do not like onions try chopping them very finely and cooking them until they are soft. They will take on the flavor of whatever seasonings you use and will hardly be noticed.
