Yes, instant oatmeal packets are convenient. However they contain many unnecessary, and not so great ingredients. Around here we are all about cooking from scratch when possible and avoiding chemicals and preservatives in our food sources.
Most store-bought, instant oatmeal options contain about eight ingredients. Honestly, compared to most convenience foods this is not too bad. However, many of these ingredients have been processed and some (like preservatives) are unnecessary when you make your own oatmeal from scratch.
The taste of from scratch baked oatmeal is significantly better as well! Not to mention that you get much more yield out of this recipe than you do the instant oatmeal packaging, meaning it will last longer and feed more people. Everything tastes better from scratch and your wallet will thank you too!
Breakfast or Dessert?
Although this recipe is technically considered breakfast, this blueberry baked oatmeal is so delicious you could serve it as a dessert! - 1/4 cup brown sugar
- 2 tsp cinnamon
- 1 egg
- 1 tsp baking powder
- 1/2 pint fresh or frozen blueberries (about 1 cup)
Streusel Topping
- 1 cup oats
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1 tsp salt
- 1/2 cup butter (one stick)

Substitutions for Blueberry Baked Oatmeal
Cane sugar. The cane sugar can be replaced with maple syrup or honey for a healthier, lighter sugar alternative. Replace using equal measurement.
Brown sugar. Use equal parts brown coconut sugar as a less processed, more natural substitute for brown sugar.
Cinnamon. The cinnamon is completely optional but does add flavor.
Butter. Butter can be substituted with equal parts melted coconut oil if desired.
Storing Your Blueberry Baked Oatmeal
Blueberry baked oatmeal is without a doubt best fresh! However, it can be made and stored for eating throughout the week in a glass container with a lid. Store in the refrigerator for up to five days and use as needed!
Tip: If you have leftovers they are best reheated in the oven vs the microwave.

Simple Blueberry Baked Oatmeal
Ingredients
- 2 cups old fashioned oats
- 2 cups milk
- ⅓ cup cane sugar
- ¼ cup brown sugar
- 2 tsp cinnamon optional
- 1 egg
- 1 tsp baking powder
- ½ pint fresh or frozen blueberries about 1 cup
Streusel Topping
- 1 cup oats
- ½ cup all purpose flour
- ½ cup brown sugar
- ½ tsp salt
- ½ cup butter one stick, melted
Instructions
Overnight Method
- Mix oats, milk, sugar, brown sugar, cinnamon, egg, and baking powder in a large mixing bowl or bowl of a stand mixer. Cover and place in the refrigerator overnight.
- Combine topping ingredients, leaving the butter out for now, and place in a cool, dry place or plastic bag overnight for use in the morning.
- When ready to bake, remove oatmeal ingredients from refrigerator and place in a well greased 9×13 baking dish. Gently fold in fresh or thawed frozen blueberries.
- Bake at 350℉ for 15 minutes.
- While oats are baking, melt butter and add to topping ingredients. Stir in until well combined. Texture should be like a thick granola.
- Remove oats from oven after baking 15 minutes and add topping, pressing gently into the oatmeal with a fork or spatula.
- Bake an additional 20-25 minutes or until topping is golden brown.
Instant Bake Method
- Combine all the oatmeal ingredients, except the blueberries, in a large mixing bowl or bowl of a stand mixer. Place in a well greased 9×13 baking dish and gently fold in blueberries.
- Bake at 350℉ for 15 minutes.
- Combine all the topping ingredients (same bowl you used for oatmeal can be used). Stir until well combined. The texture should be like a thick granola.
- Remove oats from oven and top with streusel topping, pressing some of it down into the oat mixture.
- Place back in oven and bake an additional 20-25 minutes or until topping is golden brown.
